Pesto Mozzarella Pasta Salad

Happy Friday, friends! As you’re reading this, I’m up in the beautiful state of Wisconsin, enjoying the rustic country for the weekend. Just like earlier in June, the hubster and I drove up last night to spend the weekend having some fun in the sun. On the agenda: relaxation! I’m hoping for some sunny weather so that I can work on my tan. I’m a tan-burn girl, so I get a combination of a tan and burn, but I’ll take what I can get! Since I won’t be back until Monday, I will respond to all of your comments as soon as I can!

I thought today would be a great opportunity for me to share another salad that I’m crazy about, pasta salad! It’s a summer staple, one that’s always present at bbq’s, get togethers, and other summer events. Or in my case, a lunchtime favorite! I love whipping up pasta salads on the weekend, and then dividing it into separate containers to take for my lunches at work during the week. I am all about creating new pasta combinations, and I’ve made a sure winner this time!

Just like my Corn and Tomato Salad and Strawberry Spinach Salad, this Pesto Mozzarella Pasta Salad is a cinch to throw together! The key ingredient is the Parmesan Basil Pesto Sandwich Spread & Dip from Hidden Valley. It’s fairly new and so tasty! You can find it in the dressing and condiment aisle at the grocery store. Since I was in the mood for a salad, I decided to toss this spread with some pasta to create a creamy dressing.

When I get bored of salads, I just have to remind myself that they don’t always have to be the green leafy variety….a pasta salad is the perfect spin off of the traditional (sometimes boring just green salad).I pack my husband’s lunches for him (I know, so dorky) but this is the perfect thing for him. He’s a teacher so he can’t leave the building for lunch, and won’t buy his lunch because he says there yucky. I love the pesto/mozz/tomato combo!! Too bad I can’t grow mozzarella on a plant, hehe. Enjoy your fun sounding weekend!

I agree, Laura! I can get bored with green salads too, so I love finding new salad combinations. And the possibilities are endless, especially with pasta salads! Wouldn’t that be wonderful if you could grow a mozzarella plant? It would be perfect for your garden! :)

Great idea to use a jarred sandwich spread as a sauce. I’ve heard of people doing this with things like olive paste, which sounds good, too.
Anything like this gets my vote, plus farfalle are my favourite pasta shape, for some reason. I call them ‘bow-tie pasta’!
Have a great weekend away, Gayle!
