Another Valentine’s Day has come and gone. Did you celebrate the special day or just treat it like any other Saturday? The hubster and I aren’t big into celebrating it. Don’t get me wrong, I love all of the pink and red heart decorations and goodies floating around this time of year, and definitely don’t mind a card or some flowers, but I could pretty much take it or leave it.
When the hubster and I were dating, we would celebrate the anniversary of our first date (which was February 5th) and Valentine’s Day into one. Now that we’re an old, married couple (ok so not that old, but we’ve been married for a year and a half already!), we just jump right to our annual Valentine’s Day tradition: we order a heart-shaped pizza from one of our favorite pizza places!
We started this about four years ago and it’s been our special tradition ever since. Throughout the past few years, we’ve ordered some spectacular heart-shaped pizzas, and some that would put those lovely hearts to shame. But whatever the shape may be, I’m always excited to eat my favorite food (I could eat pretty much every day) and spend time with the hubster.
So naturally, there has to be a connection between our heart-shaped pizza and the recipe I’m sharing today, right? Well, sorta…since I definitely ate my weight in pizza this weekend (that’s not a bad thing, right?), I thought I would start the week off with a healthier treat. And that’s where these Coconut Oil Chocolate Hazelnut Squares come in! Because I just can’t get enough of granola and experimenting with the endless flavors, I decided to whip up these squares using some ingredients that I found in my kitchen.
I’ve made granola bars before and plenty of granola recipes too, but these Coconut Oil Chocolate Hazelnut Squares are my new favorite. Jam-packed with chocolate, peanut butter, hazelnuts, and coconut oil, these squares come together in minutes and are an easy, no-bake treat. These granola squares are perfect to grab ‘n go for a quick breakfast or mid-morning snack. And because they’re filled with simple ingredients, you can feel good about what you’re eating.
This was my first time using coconut oil in a granola bar and it’s definitely not the last! Since there are so many health benefits to using this oil, I try to sneak it into my baked goods whenever I can. And if you’re not a fan of anything coconut flavored, you’re in luck because the oil doesn’t make these squares taste like coconut, I promise!
These Coconut Oil Chocolate Hazelnut Squares are full of a chocolate and creamy peanut butter, with the crunch of hazelnuts and chocolate chips sprinkled on top. These squares are also easy to make and so much better than the store-bought kind. If you’re anything like me and go through a box (or two) of granola bars a week, then save yourself some money and try out these squares. Delicious, nutritious and full of flavor, you’ll never go back to the packaged kind again!
Yields 12 squares
Jam-packed with chocolate, peanut butter, hazelnuts, and coconut oil, these squares come together in minutes and are an easy, no-bake treat.
11 minPrep Time
- 2 1/2 cups old-fashioned oats
- 1 cup milk chocolate chips
- 1 teaspoon chia seeds
- 1/2 cup hazelnuts, chopped
- 2/3 cup peanut butter
- 1/2 cup honey
- 1/2 cup coconut oil, in solid form
- In a large bowl, combine oats, chocolate chips, chia seeds, and 1/4 cup hazelnuts. Set aside.
- In a medium bowl, combine peanut butter, honey, and coconut oil. Microwave until melted, stirring every 20 seconds so that oil does not burn.
- Remove from microwave and pour peanut butter mixture into oat mixture.
- Stir thoroughly until combined.Chocolate chips will melt and create chocolate mixture.
- Pour mixture into an 8x8 baking pan and press down using a spatula.
- Top with additional chocolate chips and rest of hazelnuts.
- Refrigerate until firm, about 30-40 minutes.
- Cut into squares.
Squares are best kept in the refrigerator, as the bars will become too soft if left at room temperature because of coconut oil.
