Let’s talk about movies today.
I have a lot of favorites, but one of the movies that ranks in my top ten list is The Great Outdoors with John Candy and Dan Akroyd. And for those of you that said you’ve never seen Lucas (from yesterday’s recipe), you need to add that to your list, too!

And this movie always seems to show up on TV more so over the summer. Kinda fitting for the season, right?
Now, my family isn’t necessarily like the ones portrayed in the movie (I’m definitely not a creepy twin, like Dan Akroyd’s daughters were in the film), but it always reminds me of my summer vacations spent in northern Minnesota.
My family and I took the twelve hour drive to Minnesota to spend a week in the woods. We stayed in a cabin that was part of a resort (actually known as a lodge) and would fish, hike, swim, and enjoy the great outdoors. I haven’t been up there since I was in high school, but my family still gets up there when time allows.
And one of my fondest memories was going fishing. I still love to fish, and look forward to doing it when I can. Back in my younger years, I wasn’t half bad. I could bait my own hook (not with using leeches, though…yuck!), take certain fishes off the line, and give a pretty good cast.
Nowadays. the hubster and I go up to his family’s cabin in Wisconsin every summer, so I’m able to practice with fishing whenever I have the chance. We don’t eat the fish we catch, but it’s still fun to reel the line in and see what you’ve caught.
And fishing reminds me of seafood. This is one of my favorite cuisines and I just can’t get enough of it. Fish, shrimp, lobster, mussels, scallops, calamari…you name it. I’m not picky with seafood and I love to try new and different dishes. And luckily, the hubster loves it too, which means that we eat seafood quite often.

Easy peasy and so full of flavor. And if you need to test it with a spoonful (or three) before adding it to your burger, I won’t tell. It’s fresh, sweet, and has a bit of a kick from the jalapeno and lime juice.

Alaskan Pollock Burgers with Peach Mango Salsa
Ingredients
Peach Mango Salsa
- 2 ripe mangos diced
- 2 peaches peeled and diced
- ½ small red onion diced
- 1 red bell pepper chopped
- ¼ cup chopped fresh cilantro
- 1 jalapeno seeded and diced
- Juice of one lime
- 1-2 tablespoons sea salt depending on your tastes
Burgers
- 4 Trident Seafoods® Wild Alaskan Pollock Burgers
- 4 burger buns cut in half
Instructions
- In a medium bowl, combine the mango, peaches, red onion, red bell pepper, cilantro, and jalapeno. Drizzle in lime juice and add salt. Stir thoroughly to combine and refrigerate until ready to serve.
- Cook Trident Seafoods® Wild Alaskan Pollock Burgers according to package directions.
- Place burgers onto buns and top with Peach Mango Salsa. Serve immediately.
