I’ve mentioned before that I’m not a huge breakfast person. During the week, I’m usually rushing out the door to get to work and am lucky if I remember to grab a granola bar or some yogurt.

But don’t get me wrong, I love breakfast! It’s actually my favorite meal of the day, though I never usually it eat. Kind of ironic, huh? I love going out for breakfast or making it on the weekends, though. It’s almost therapeutic for me to whip up some pancakes or eggs.

But as tasty as pancakes and eggs are, they’re not the most convenient item to grab on your way out the door.

So I decided to make this Banana Baked Oatmeal so that I would have no excuse to not have breakfast during the week. And guess what? It worked! This oatmeal makes a comforting and delicious breakfast and can be eaten hot or cold.

Since I’ve been on a banana kick lately (have you tried my banana honey muffins yet?), this was the first fruit that came to mind. With its warm flavors and comforting spices, it almost tastes like you’re eating a healthy piece of banana bread!

And like most of my recipes, this baked banana oatmeal recipe is a breeze to whip up. The hardest part is mashing the bananas! It takes just minutes to prepare and then the oven does the rest of the work.

What’s Needed for Banana Baked Oatmeal?

This healthy baked oatmeal recipe comes together quickly with minimal ingredients:

  • Bananas
  • Old-fashioned oats
  • Ground cinnamon
  • Nutmeg
  • Baking powder
  • Baking soda
  • Milk
  • Salt
  • Eggs
  • Honey
  • Vanilla bean paste

How to Make Banana Baked Oatmeal

  1. Place layer of banana slices on the bottom of an 8×8-inch baking dish.
  2. In a medium bowl, combine the oats, cinnamon, nutmeg, baking powder, baking soda and salt. Set aside.
  3. In another bowl, combine the mashed bananas, milk, eggs, honey, and vanilla bean paste/extract.
  4. Pour oat mixture into wet ingredients and stir until combined.
  5. Pour over banana slices in baking dish.
  6. Bake until firm.

I served this oatmeal with a few slices of banana and a drizzle of honey and fell in love. The cinnamon and brown sugar take on a delightful flavor, while the bananas add in a subtle sweetness. This would be perfect to eat plain or with some maple syrup, too.

How to Reheat Baked Oatmeal

This easy baked oatmeal can be reheated in a 350F oven until warm (15 minutes or so), or it can be reheated in 30-second intervals in the microwave.

Can I Freeze Baked Oatmeal?

Yes! You can freeze the entire pan or individual slices. If freezing individual slices, first freeze them in a single layer on a baking sheet. Once firm, stack in a freezer bag. You can reheat the banana baked oatmeal in the microwave.

Tips for Making Banana Baked Oatmeal

  • Make sure to use the ripest, brownest bananas that you have in your kitchen. The more brown, the better! This will add extra sweetness to the baked oatmeal.
  • If you like oatmeal on the sweeter side, add an extra tablespoon (or two) of honey. I chose to add only 3 tablespoons, but more could be added, depending on your tastes. Maple syrup also works well, too.
  • I like to use this vanilla bean paste in all of my recipes that call for vanilla extract. The paste gives it a stronger vanilla flavor, without causing the oats mixture to become watered down.

Ingredients
 

  • 1 medium ripe banana, , sliced into thin pieces
  • 2 cups old-fashioned oats
  • 2 teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 medium ripe bananas, , mashed
  • 2 cups milk, , any kind (I used 1%)
  • 2 eggs
  • 3-4 tablespoons honey, , depending on your taste
  • 1 teaspoon vanilla bean paste, (or vanilla extract)

Instructions
 

  • Preheat oven to 350°F. Lightly spray an 8x8 baking dish with cooking spray. Place sliced bananas in an even layer on bottom of dish. Set aside.
  • In a medium bowl, combine the oats, cinnamon, nutmeg, baking powder, baking soda and salt. Set aside.
  • In a large bowl, combine the mashed bananas, milk, eggs, honey, and vanilla until mixed thoroughly. Pour oat mixture into wet ingredients and stir until combined.
  • Spread mixture in an even layer on top of sliced bananas in baking dish.
  • Bake for 35-45 minutes or until oatmeal is firm. Remove from oven and let cool for 10 minutes. Serve immediately with sliced bananas, honey, or maple syrup, if desired.

  • Baked oatmeal will last in an airtight container at room temperature for up to five days.
