One of my favorite things to do on the weekends is to make breakfast for the hubster and I. It gets our day off to a great start, and it always feels good to relax and be able to indulge just a little bit, when time allows.
I’ll whip up this Bacon and Egg Breakfast Pizza, that Cinnamon Banana Croissant French Toast, or these Chocolate Chip Biscuits. These are tried and true recipes that are a favorite of mine (and yours, too!) that I just can’t resist.
But, we’ve been busy lately, and I’ve been slacking on my breakfast duties. So, when I got a huge craving for pancakes a few weeks ago, I decided to make a simple, yet tasty favorite of mine.
This Blackberry Streusel Pancake Casserole is an easy dish that the whole family will enjoy. Fluffy, buttermilk pancake batter is studded with fresh blackberries and then topped with cinnamon streusel. Baked until golden and bursting with flavor, this comfort dish is the ultimate breakfast!
I love making pancake casseroles because of the ease of the dish. Because it doesn’t require you to stand over a hot stove and use your pancake flipping skills, you can have this breakfast prepped and ready to bake in less than 10 minutes. Once everything is ready, just pop it into the oven and let it work its magic.
I used Krusteaz Protein Complete Buttermilk Pancake Mix for the base of this recipe. It has 13 grams of protein per serving and ensured that this Blackberry Streusel Pancake Casserole turned out light, fluffy, and extra delicious! Plus, sneaking in some extra protein to my diet is always a bonus!

Blackberry Streusel Pancake Casserole
Ingredients
- 3 cups Krusteaz Protein Complete Buttermilk Pancake Mix
- 2 cups cold water
- 1½ teaspoons baking powder
- 2 teaspoons vanilla bean paste, or vanilla extract
- 1 (6 ounce) container fresh blackberries
Streusel
- ½ cups all-purpose flour
- 3 tablespoons packed light brown sugar
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 4 tablespoons cold, unsalted butter, cubed

There’s no step by step instructions to this recipe. All I see is “click here for the full printable recipe.” Even there, the step by step instructions are not there. Am I only using the mixture powder and the listed ingredients, or the listed included to be added? What temperature of the oven and how long? Do I put the topping on before, during, or after the pan is in the oven?
Hi Michael, sorry about that. Apparently Krusteaz took the recipe off their site. Yes, just mix the pancake ingredients together, top with the streusel ingredients, and bake in a 9×13 pan for about 20-25 minutes at 350, it may need to bake longer (I don’t remember the exact time).
It was delicious. I made it with my grandmother’s pancake batter and it turn out great. It took a little longer to bake ( 45 min. ) Great ideaGayle
