I feel like I say this all too often, but I wish time would just slow down a little. Why doesn’t life come with a pause button?
And now that we’re just about a week away from Labor Day, I’m trying to cram all the summer things in while I can. The fresh summer produce, trips to the farmer’s market, lazy evenings spent outside, and enjoying the warm weather.
I know fall doesn’t officially start for another month or so, but Labor Day signals the unofficial end of summer. And while I’m excited for fall to arrive, I want to hold onto summer just a little bit longer.
This year, I’m hoping to kick off Labor Day weekend with a little relaxing, lots of yummy food, and some last, summer fun. And did I mention food? Because it’s all about the food around here, friends!
I love making desserts that are simple, easy to transport, and in mini form. And since Labor Day often involves parties or barbecues, I thought these Blueberry Almond Poppy Seed Muffin Trifles would be the perfect sweet treat.
Blueberry Almond Poppy Seed Muffin Trifles are filled with creamy, whipped vanilla pudding, almond poppy seed muffin chunks, and fresh blueberries. It’s layered together to create a simple dessert that’s ready in no time!
For the muffins, I used Krusteaz Almond Poppy Seed Muffin Mix. Have you tried that yet? It’s easy to prepare and so delicious! I knew it would serve as the perfect base for these trifles. After all, Krusteaz is my preferred mix of choice for the tastiest outcome in all of my baked goods!
And the vanilla pudding, mixed with whipped topping, gives these trifles a little something sweet and creamy, especially when combined with some fresh blueberries.ย I chose to serve this in mini mason jars, but feel free to use a regular trifle dish if you prefer.

Blueberry Almond Poppy Seed Muffin Trifles
Ingredients
- 1 package Krusteaz Almond Poppy Seed Muffin Mix
- 1 cup water
- 1 egg
- 1 packet poppy seeds, enclosed with Krusteaz Almond Poppy Seed Muffin Mix
- 1 box (3.4 ounce) instant vanilla pudding mix
- 2 cups cold 2% milk
- 1 (8 ounce) container whipped topping
- 2 cups fresh blueberries
Instructions
I seriously think I might cry when summer comes to an end this year. I know summer goes by fast every year, but this year we were so busy finishing the house, packing, moving, unpacking, then decorating that I didn’t get any time to really ENJOY summer. It makes me sad knowing I’m going to have to wait an entire year before I get a chance to relax with a book at the beach. UGH. BUT, I do love fall weather, so I guess there is always a silver lining, right?! Anyways, just when I thought muffins couldn’t be any more delicious you go and make THIS! WOWZA! My son and I were just talking about something that happened 2 months ago, and we both about fell off our chairs in disbelief that time has gone by so quickly! Absolutely nuts! The only saving grace is autumn follows summer and we love autumn!! I love this trifle! The flavors certainly, but it’s so gosh darn cute in that mason jar! Pinned!

I want life to have a pause button too…I just can’t seem to stop and savor anything right now! I’m in love with individual desserts and these are just the prettiest trifles! Those muffins sound delicious and it’s always a good idea to add blueberries!

So, it is winter! New Year’s Eve to be exact and I am in a brrr….cold climate though we’ve warmed up a bit! I am making this for a dinner with friends tonight to ring in 2023. The only thing I changed? I used Krusteaz (I agree they are the best!) gluten-free almond poppyseed mix and baked it in an 8 x 8 baking dish to easily cut cubes. To the vanilla cook-and-serve pudding…. we’ve added Bailey’s Irish Creme while it is still warm (though I’m sure it doesn’t need to be!) I am so anxious to see how it turns out.
