Chocolate is a necessity in life. Especially when it’s only Wednesday, there are two more days of work left, and it should-be-Friday-but-isn’t. Agree? If you’ve been hanging around here long enough, you probably know that while I do love chocolate, I don’t need to consume it every single day. Well, today is not one of those days, guys. I am in need of a pick-me-up and created the perfect chocolate treat…Caramel Toffee Chocolate Bark. That’s a mouthful, isn’t it? And no pun intended!
Before I get into the nitty gritty of the recipe, let me back up a minute. I recently did some shopping at Trader Joe’s. Believe it or not, there’s not a location that is close to my house, so I usually have to drive at least a half hour out of my way to get to a TJ’s. So needless to say, I hardly ever shop there. But when I do, I usually go to browse their specialty foods and products. And one item that I always hear people talking about is their pound plus chocolate bar. Now, before I actually saw this bar at TJ’s, I just couldn’t understand what would make this chocolate so special. After all, it’s just baking chocolate, right? Well, yes and no. If you’ve seen the pound plus bar, you know what I’m talking about. It’s literally a pound of chocolate in a thick bar. I almost needed two hands to pick it up! So when I went to Trader Joe’s, I made a beeline for this chocolate and stocked up on several bars. I knew I wouldn’t be back there anytime soon, so I felt it was extremely necessary to hoard as much chocolate as possible. Am I going just a little overboard here? Nah, this chocolate is a necessity!
So after I grabbed the chocolate and a few other items, I raced home to see what I could make with my ten pounds of chocolate! Ok, I’m over exaggerating just a tad, but I did by a few pounds of it. Don’t judge, guys. Since I love reading food blogs, I was inspired by an easy recipe from Averie’s site. And all I needed was a few ingredients to make up this Caramel Toffee Chocolate Bark!
Rich, dark chocolate, covered in caramel pieces, toffee bits, and pretzels creates this smooth and luscious treat. Sounds amazing, doesn’t it? I was literally in awe of how easy this was to make! In fact, I wrote down at least five other flavor combinations that I could create with this bark. And it would make a perfect gift for the holidays, a birthday, or just for that special someone. This recipe is very easy to adapt to your tastes, so feel free to swap out the caramel with M&Ms, the pretzels with graham crackers, the dark chocolate with white chocolate…see what I mean?
So let me amaze you with how easy this Caramel Toffee Chocolate Bark is to whip up! First, prepare all of your toppings before you start with the base. The chocolate will harden fast once it’s melted, so you want to be sure you have everything ready to go. I crushed up some pretzels by hand, quartered 30 caramel pieces, and measured out some toffee bits. Also make sure to line a 13 x 9 baking tray with parchment paper with extra to hang over the sides of the tray. This is a necessity so that the chocolate comes out in one block. Then, you take your chocolate (I highly recommend TJ’s Pound Plus Dark Chocolate Bar) and melt it in the microwave until smooth. Be sure to stop and stir the chocolate every 30 seconds to ensure it does not burn. Once the chocolate it smooth and velvety, pour into the lined baking tray. Working quickly, top with the pretzels, caramel pieces, and toffee. Lightly press the mixture down so that it adheres to the chocolate. Once your bark is all set, pop into the freezer for about 30 minutes to harden (or the refrigerator for about an hour). When the chocolate is ready, remove from the freezer and lift out the parchment paper. You will find the chocolate lifts out in one smooth block! I broke the bark into pieces with my hands, but feel free to use a knife.
The chewy caramel, buttery toffee bits, and pretzels give the chocolate a sweet and salty flavor. Trust me, guys, if you love chocolate, you will want to make this right away. As soon as possible. - 16 ounces dark chocolate (I used Trader Joe's Pound Plus dark chocolate bar)
- 30 caramel squares, unwrapped and quartered (I used Kraft's caramels)
- 2 cups pretzels, chopped into pieces
- 1/4 cup toffee bits
- Line a 13 x 9 baking tray with parchment paper, making sure that extra paper hangs over the sides for easy lifting once chocolate is hardened. Set aside.
- Assemble all of your toppings and have them ready to go.
- In a medium bowl, break chocolate into pieces and microwave until fully melted and smooth. Be sure to stop and stir every 30 seconds so that chocolate doesn't burn.
- Once chocolate is melted, pour into prepared tray.
- Top with pretzels, caramels, and toffee bits. Press down lightly on toppings to ensure that it adheres to chocolate.
- Place tray into the freezer to harden for 30 minutes (or into the refridgerator for one hour).
- Once ready, lift parchment paper by overhang and set on counter. Chocolate will lift right out of paper.
- Break into large pieces by hand or using a knife.
Chocolate bark will keep in an air tight container for up to one month if left on the counter, or will keep in the refrigerator for several months.
This bark is easy to adjust to your tastes, so feel free to swap out the dark chocolate with milk chocolate, the pretzels for graham crackers, etc.
