Remember how I shoved this guacamole in your face last week? Well, it get’s even better, guys. Yep, there is a way to make guacamole taste even more delicious than it already is, and it involved lots of carbs. But that’s not really surprising, right?

And this Cheesy Guacamole Toast is one of the easiest recipes I’ve ever shared. In fact, it shouldn’t  even be a recipe since it’s practically fail-proof. But since I absolutely adore the easiest creations (and I know you do, too!) I thought I would share my latest and greatest carb-loaded-creamy-cheesy-guacamole goodness with you.

But first, let’s get back to that guacamoooleeee.

Subway commercial reference again, sorry guys. It’s filled with everything that avocados were meant to be combined with: fresh tomatoes, red onions, cilantro, and lots of garlic. Throw that together with some fresh mozzarella and crusty bread and you have yourself the perfect breakfast, lunch, dinner, snack…it basically works for any and all meals.

It’s also perfect to serve for those summer get-togethers, parties, or for when you have some leftover guacamole and you want to use it up.

I will admit that guacamole (especially the homemade kind) doesn’t last long in my house at all. The hubster doesn’t eat it, which means that I usually end up devouring the entire batch in about 10 minutes. I have no shame. So this time, I decided to get a little more creative and actually pile it onto some bread. That way, it makes me feel like I’m eating an actual meal. Make sense?

And guys, this Cheesy Guacamole Toast takes just minutes to prepare.

You knew that was coming, right?

Simply spread a generous helping of guacamole and some thick bread and top with shredded mozzarella cheese. Pop it into the oven for about 10 minutes and then remove and top with fresh tomato slices.

Within minutes, this Cheesy Guacamole Toast is ready and waiting for you. The melty cheese and creamy guacamole, combined with the hearty bread and fresh tomatoes will provide the perfect explosion for your taste buds. Tangy, delicious, and on the healthy side, this snack (or breakfast or lunch) will be a new favorite of yours. I promise!

Cheesy Guacamole Toast

This Cheesy Guacamole Toast is loaded with creamy guacamole, mozzarella cheese, and fresh tomatoes. Full of flavor and healthy ingredients, this toast makes the perfect breakfast or mid-morning snack!

Ingredients

  • 4 slices thick bread I used a honey oat bread
  • 8 tablespoons guacamole divided (or any store-bought version works, too)
  • 8 tablespoons shredded mozzarella cheese divided
  • 1 medium tomato sliced
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Place bread slices in a single layer on a baking pan.
  • Top each slice with 2 tablespoons of guacamole, followed by 2 tablespoons of mozzarella cheese. Bake for 10-12 minutes, or until cheese is melted and bread is starting to brown.
  • Remove from the oven and top with tomato slices. Season with salt and pepper, if desired. Serve immediately.
