Maybe it’s decorating the Christmas tree, finding that special gift, or sharing a delicious meal with your family or friends.
While it’s hard to narrow down just one special moment for me, I guarantee that it involves some tasty treats and the company of my loved ones. After all, the holidays are all about the food, right? Ok, so not ALL about the food, but that’s a big part of it. I’ve been baking up a storm for the upcoming season and can’t wait to share some of my decadent goodies with you.
And right now, my perfect holiday moment involves this Cherry Cola Bread and getting together with my family. Nothing says holiday and family time more than a sweet treat and laughs.
When I was shopping at Target last week (my weekly obsession), I stumbled upon the soda aisle. I remembered that I had visions of creating this Cherry Cola Bread and decided to put my idea to use. Plus, sodas are perfect for entertaining around the holiday season because of their crisp and refreshing taste.
So, I grabbed some RC TEN® and regular A&W® (10 calories, full flavor) and tossed them into my cart. When I got home, I gathered the ingredients to make this easy and oh-so delicious Cherry Cola Bread. This quick bread is flavored with RC TEN®, sweet cherries, and drizzled with a cola glaze. It packs a flavorful punch and is soft, moist, and perfectly sweetened. This bread makes the best holiday treat to share with those around you!
My inspiration for this Cherry Cola Bread came from a fall edition of Taste of Home magazine from several years ago. I adapted it to fit my tastes, and man oh man, is this bread good! I thought this bread captures the perfect moments of the holidays because of its sweet flavor and festive color.
Besides the fact that this bread is perfectly sweet and moist, it’s also a breeze to whip up. And that’s a definitely plus around the holidays, right?
To start, you’ll cream some butter and sugar together until it’s light and fluffy. Then, you’ll add in some eggs, followed by the flour, baking soda, baking powder, and salt.
Next comes the fun part: the cherries! I opted to use frozen, sweet cherries, but feel free to use maraschino or fresh cherries. Simply stir the cherries into the batter and then pour into two prepared loaf pans. This recipe makes two loaves, which is perfect for sharing around the holidays!
Once this Cherry Cola Bread is done baking, let it cool completely. Then it’s time for the glaze. Simply whisk together some powdered sugar and RC TEN®, then drizzle over the cooled loaves.

- 1 cup unsalted butter, softened
- 1 cup white sugar
- 5 eggs
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups RC TEN®
- 1 cup frozen sweet cherries
- 1 cup powdered sugar
- 1/4 cup RC TEN®
- Preheat oven to 350F. Lightly grease two loaf pans with non-stick cooking spray. Set aside.
- In a large bowl, beat butter and sugar on medium speed with a hand mixer or stand mixer with fitted paddle attachment until light and fluffy.
- Add eggs one at a time, beating well with each addition.
- Add in flour, 1/2 cup at a time, followed by RC TEN, 1/4 cup at a time.
- Add in baking powder, baking soda, and salt. Mix until just combined.
- Stir in cherries.
- Pour batter into prepared pans and bake for 45 minutes to 1 hour, or until toothpick inserted into middle comes out clean.
- Remove from oven and let cool completely.
- When loaves are cooled, prepare the glaze.
- In a medium bowl, whisk together powdered sugar and RC TEN®.
- Drizzle over cooled loaves.
