There’s just something about presenting food in a bowl that makes it more comforting to eat.

Quinoa bowls, smoothie bowls, and noodle bowls. All of those dishes can be served on a plate, but for some reason, it seems more comforting in a bowl. Am I right?

And with the winter being in the single digits and teens lately, I need all of the comfort food I can get! And while soup is high on my list of foods to eat just about every day, I also crave nourishing bowls with hearty ingredients.

And since I’m trying to stick to my goal of eating healthier this year, I found the perfect product to keep me on track. Have you heard of Village Harvest Rice & Grains? So when I had the opportunity to try Village Harvest Arborio Rice, I practically jumped at the chance. Their rice is a great base for risotto, which is one of my favorite dishes. And Village Harvest “superfino” grade is the highest quality available, which makes me feel confident in my rice selection.

If you’re a fan of risotto like I am, then these Creamy Parmesan, Mushroom and Pea Risotto Bowls were made for you. The thick and creamy texture, along with the fresh ingredients, provides a delicious taste that is sure to fill you up and provide you with the perfect touch of comfort food.

Like most of my recipes, these risotto bowls are a breeze to whip up! The hardest part is stirring to achieve the creamy texture, which isn’t really difficult at all.

And did I mention how simple (and delicious) the ingredients are? I chose to use mushrooms since they’re my favorite vegetable. I also incorporated frozen peas and grated Parmesan cheese. Along with that, comes some garlic, chicken broth, and white wine. That’s it!

Creamy Parmesan, Mushroom and Pea Risotto Bowls

These Creamy Parmesan, Mushroom and Pea Risotto Bowls are filled with nourishing ingredients for an easy and healthier meal. Packed with Parmesan cheese, fresh mushrooms and peas, these bowls provide comfort food at its finest!

Ingredients

  • 6 cups low sodium chicken broth
  • 3 tablespoons unsalted butter
  • 8 ounces baby bella mushrooms sliced
  • 1½ teaspoons minced garlic
  • 1½ cups arborio rice
  • ½ cup dry white wine
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup frozen peas thawed

Instructions

  • In a medium saucepan, bring the chicken broth to just a boil, then simmer and keep warm.
  • In a large skillet, melt butter. Add mushrooms and garlic and sauté until tender, about 4-5 minutes.
  • Add Village Harvest Arborio Rice to skillet and stir. Sauté for about 1-2 minute, but do not brown. Add the wine to skillet and stir frequently until fully absorbed.
  • Add broth, 1 cup at a time (reserving 1/4 cup to the side), stirring frequently until each cup is absorbed. Add reserved 1/4 cup broth, Parmesan cheese, salt, pepper, and peas to skillet. Stir until absorbed.
  • Serve immediately.

    I love risotto but no one else in the house is a big fan so I've never actually made it. But I always get it when it's on the menu at a restaurant! I'm pretty sure I may need to make this one just for me - the parmesan mushroom part is calling my name!
