This Easy Chicken Noodle Soup is filled with tender chicken, fresh veggies, and lots of noodles! It takes an hour to make from start to finish and reheats like a dream!

Whether it’s negative two degrees outside or sweltering hot, I’m always looking for something to warm me up.

I get cold very easily, and feel like I’m bundling up year round! If the heat is on, I’m still wrapped in a blanket to keep me warm. And when the air conditioner is on, I’m freezing!

There’s never really a happy medium with me. That’s why I always look forward to my morning cup of coffee or tea to sip on and something hot to relax me at night.

Enter: this Easy Chicken Noodle Soup. It’s filled with tender chicken, fresh veggies, and lots of noodles. Easy to prepare and full of flavor, this hearty soup is perfect to warm you whenever your soup craving strikes.

Chicken noodle soup has always been one of my all-time favorites. I grew up eating my Grandma’s famous chicken soup and even love the canned version.

Whenever I’m not feeling well, this is my go-to meal.  And when I was little, this was often times the only meal that I would eat, as I loved the classic flavor.

So instead of making the store-bought kind, I decided to make my own Easy Chicken Noodle Soup recipe!

Ingredients for This Easy Chicken Noodle Soup

The best part about this simple chicken noodle soup recipe is that it’s simple to whip up and can be easily customized depending on your tastes.

I used shredded rotisserie chicken and lots of fresh carrots. I also added some onion and rosemary for added flavor. The classic chicken broth and wide egg noodles created an irresistibly delicious soup.

Here’s what else you’ll need to make this quick and easy chicken noodle soup recipe: 

  • Olive oil
  • Yellow onion
  • Carrots
  • Garlic
  • Salt and pepper
  • Low sodium chicken broth
  • Herbs and spices
  • Cooked and shredded chicken
  • Egg noodles

What Spices Go In Chicken Noodle Soup?

Not sure how to season chicken noodle soup? I prefer using a blend of bay leaves, dried rosemary, and dried Italian seasoning. Dried herbs pack in more flavor per teaspoon than fresh, and they’re easier to find in the dead of winter. 

What Are the Best Noodles for Chicken Noodle Soup? 

I recommend using wide egg noodles for this recipe. Wide egg noodles hold up better against the chunks of chicken and vegetables and don’t turn to mush as they sit in the broth.

How to Make Easy Chicken Noodle Soup

From start to finish, this chunky chicken noodle soup takes less than an hour to make. So that means you can whip this up on busy weeknights or prepare ahead of time so that you have a hot and flavorful meal ready to go.

Here’s how the recipe comes together: 

  1. In a large pot, add olive oil, onion, carrots, and garlic. Saute over medium heat until carrots are soft.
  2. Add chicken broth, bay leaves, rosemary, and Italian seasoning and sir to combine. Simmer for 15-20 minutes.
  3. Add in chicken and egg noodles. Simmer until noodles are cooked through.
  4. Discard bay leaves and serve immediately or refrigerate until ready to serve.

One bite and I knew that this soup would become a regular in my meal rotations. The hubster even ate several bowls of this, which says a lot since he never eats soups unless it’s served at a restaurant!

How Long Does Chicken Noodle Soup Last? 

This chunky chicken noodle soup will last about five days in the fridge, if stored in an airtight container. 

Can you freeze chicken noodle soup?

Yes, you can freeze chicken noodle soup up to three months. Just note that the noodles may change texture once frozen. However, they’ll still be safe to eat!

Ingredients

Instructions

  • In a large pot, add olive oil, onion, carrots, and garlic. Season with salt and pepper. Saute over medium heat about 5-7 minutes, or until carrots are soft.

Chicken: I used the cooked, shredded rotisserie chicken that you can find near the deli section of your grocery store.

    This winter has been terribly cold and stormy. There is nothing better than curling up on the couch after a long day of work with a bowl of soup and a blanket. I’ve been obsessed with Chicken soup this winter. Like “I need to have it every single Monday” kind of obsessed. This recipe is perfect.     I’m also on a soup kick lately. I’m usually not a soup person but this winter was so rough that it had me craving soups everyday. I made soup at least once a week since December! Love your version of Chicken Noodle soup. I usually make mine with rice but now am craving one with pasta. Need to try this before Spring comes.
