How did that happen?
Has the unofficial start of summer flown by for you so far? I swear, I just blinked and it went from Memorial Day weekend to now. Life seems to get extra busy come summer, and I’m just rolling with it.
In between graduations, parties, barbecues, and get-togethers, it’s hard to find time to just stop and appreciate the moment. You know, the sunshine, warm weather, and cooler nights. I have to remind myself to do this, otherwise summer will be gone in the blink of an eye.
Do you know what else seems to go by the wayside at times? A home-cooked meal! I’ve talked about this many times before, but I’m all about the simple recipes, and when it comes to dinner, I want something made at home. Not from a fast-food or takeout place. Most of the time, anyways.

You know i’m all about the easy meals, and this one is definitely a winner.
So let’s get down to business! While the Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is on the grill, you’ll want to prepare some white rice and sautéed spinach. Both seem like the perfect combination to serve as the base of these bowls.
To make the spinach, you want to heat some olive oil and minced garlic in a skillet, and then add in some fresh baby spinach leaves and toss until just wilted. And that’s it! It takes maybe 5 minutes at most for this step. Easy peasy!
Once the Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is done on the grill, let it rest for several minutes, and then cut into thin slices.
Fill each bowl with some white rice, sautéed spinach and the Smithfield Marinated Fresh Pork. Top with a splash of lemon juice, if desired, and dig in.

Grilled Garlic Herb Pork Bowl
Ingredients
- 1 Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 pound fresh baby spinach leaves
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 cups cooked white rice, divided
- Lemon wedges for topping, if desired
Instructions
- Heat a charcoal or gas grill to about 375F-400F.
- Place Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet onto grill and grill for 30-40 minutes per pound, turning occasionally, until meat reaches an internal temperature of 145F.
- Once Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is done, remove from grill and let rest for 5-10 minutes. Cut into thin slices.
- While Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is cooking, prepare spinach. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add spinach, salt and pepper. Toss and sauté for about 3-4 minutes, or just until it begins to wilt. Remove from heat.
- To assemble bowls, fill each bowl with white rice, and then top with sautéed spinach and 3 slices of Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet.
- Garnish with a lemon wedge, if desired.

Summer is going to fly by…the fact that it’s mid-June already is proof! I have big plans to slow down and savor every moment of summer, and finding quick meals like this is a great way to do that! This looks delicious and it’s a great reminder to add more pork to my meal plan!
