Not only am I sharing pizza with you (practically a staple for Friday nights in my house), but it’s a Hawaiian pizza with a hashbrown crust. Crazy, right?
But, before I get into the recipe and all that good stuff, pizza on Friday nights reminds me of dinner with my family, more commonly known as FFF (Fast Food Friday). This tradition started several years ago, as Friday nights are always good to relax, unwind, and leave the cooking to restaurants. Am I right?
My parents often order pizza, some other form of take-out, or will go out to dinner. And that’s exactly what the hubster and I like to do on Friday nights, too. By the end of the week, I’m often too tired to cook and tell the hubster “We’re eating whatever you make or buy!” It’s pretty much my infamous line.
But when I had the opportunity to try Hungry Jack Hashbrowns, I got the brilliant idea to make my own pizza, with a hashbrown crust. And even better, it would serve as our Friday night pizza for the hubster and I. That means a night in and relaxing with a movie and some pizza. Sounds pretty good for the end of the week!

Did I mention how easy this pizza is to make? Simply follow the directions on the Hungry Jack Hashbrowns carton to prepare the potatoes, and then fry them in a cast iron skillet. Then, it’s time to pile on the toppings! After everything is prepared, pop the skillet into the oven and let it work its magic.

Hawaiian Pizza with Hashbrown Crust
Ingredients
- 1 (4.2 ounce) carton Hungry Jack Cheesy Hashbrown Potatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- ¾ cup pizza sauce
- 1½ cups shredded mozzarella cheese
- 3 slices Canadian bacon chopped
- 4 slices bacon cooked, drained, and crumbled
- ½ cup pineapple chunks
Instructions
- Preheat oven to 425F.
- Prepare Hungry Jack Cheesy Hashbrown Potatoes according to package directions.
- Heat olive oil in a medium cast iron skillet. Pour potatoes into skillet and press up the sides to form a crust. Fry for 4-5 minutes, or until just starts to brown. Season with salt and pepper.
- Spoon sauce over hashbrowns in an even layer. Top with cheese, Canadian bacon, bacon, and pineapple chunks.
- Bake for 22-25 minutes, or until crust is crispy. Remove from oven and let cool for 5 minutes.
