Microwave Mug Omelet

Cooking eggs in the microwave may sound a bit strange, but it might just be my new favorite way to enjoy eggs.

If you’re short on time, don’t feel like pulling out a pan and washing dishes, this microwave omelette is for you.

Egg breakfast ideas are always a delicious option. But, unlike this breakfast quesadilla and those breakfast hot pockets, this mug omelet recipe is ready in a matter of minutes. 

The eggs turn out fluffy and you can dig in right away. Perfect for when you only have five minutes for breakfast or are running out the door.

And the best part? You can customize this mug omelette depending on your tastes. And what your kids like, too. Everyone can have their own mug and dig in. Like bacon? Add it in! Have cilantro, green onions, or peppers lying around? Toss them in.

Ingredients in Microwave Mug Omelet:

  • Eggs
  • Milk
  • Shredded cheddar cheese
  • Salt and pepper
  • Mix-ins (optional), such as green bell peppers, green onions, spinach, ham, bacon, etc.

How to Make a Mug Omelette:

  1. Lightly grease an 10-12 ounce microwave-safe mug with cooking spray.
  2. Crack both eggs into mug, add milk and whisk to combine. Stir in cheese, salt, and pepper.
  3. Microwave, uncovered, on medium for 45 seconds, remove and stir. If using any other mix-ins (spinach, ham, peppers, etc.), add them to mug and stir to combine (adding them after eggs are partially set will help ingredients not sink to bottom of mug). Cook an additional 30 seconds to 1 minute, or until eggs are set.

Is it Omelet or Omelette?

I had to look it up and both are correct! Omelet is the spelling used in American English and omelette is the spelling used in British English.

Can I Reheat this Omelet?

It is best eaten right away, as when reheated, the eggs may become rubbery.

What Can I Mix into the Eggs?

While you can eat this with just cheese, and it’s delicious as is, it’s fun to customize your egg omelet!

  • Fresh spinach
  • Chopped bacon
  • Red or green bell peppers
  • Ham
  • Mushrooms
  • Sausage
  • Green onion
  • Cilantro
  • Chives
  • Tomatoes

Tips for Cooking Eggs in the Microwave:

  • Mug size: I like to use a microwave-safe 10-12 ounce mug, just in case the eggs puff up and overflow.
  • Cooking spray: Lightly grease the inside of your mug with cooking spray so that the eggs don’t stick to the side of mug and it rinses clean when washed.
  • Be sure to whisk the eggs until they are a pale yellow color. No bits of yolk should remain.
  • Don’t skip the milk! It helps the eggs become fluffy. You can use your milk of choice, or even water.
  • Add the mix-ins about halfway through cooking. This will help whatever you add to not sink to the bottom of the mug.
  • Keep an eye on the mug omelet when cooking, as you don’t want the eggs to overcook and become rubbery. The eggs should be just set when done.

Mix-ins:

  • ¼ cup fresh spinach
  • 2 tablespoons diced red or green bell peppers
  • 2 tablespoons diced ham
  • 2 strips cooked bacon , (chopped)
  • Diced green onion, chives, cilantro

Instructions
 

  • Lightly grease an 10-12 ounce microwave-safe mug with cooking spray.
  • Crack both eggs into mug, add milk and whisk to combine. Stir in cheese, salt, and pepper.
