Do you ever get into one of those food kicks where you just crave the same thing, all the time?

Of course, I crave pizza (and coffee) quite often, but my newest addiction has been blueberries. I just can’t get enough of them!

That’s a fairly healthy craving to have, right? And I’m not complaining, but it’s just kinda strange, for lack of a better word. Strange, because although I adore blueberries, it’s one of those fruits that I often forget to buy, unless I’m baking with it. So…I guess I can blame my blueberry cravings on baking everything with blueberries lately.

I’ve been eating blueberries like crazy lately, since it’s so fresh and readily available, now that summer is here. But, rewind back to April, and I had a tough time finding fresh blueberries! They weren’t ripe enough, too expensive, or the stores just didn’t carry them. Crazy, right?

But, now that summer is officially here, I’m able to buy fresh blueberries whenever I want. And that means that I’m visiting my local farmer’s markets as often as possible!

This was my first time making a fruit tart, and it’s definitely not the last! This dessert is so easy to make, that I guarantee you’ll be whipping this up all year long. I mean, who can resist mini tarts topped with colorful, fresh fruit? Not me!

The crust that I used is a recipe from Paula Deen (one of my favorite chefs) that I tweaked just slightly. The mascarpone filling though, that’s all mine. Instead of using a regular cream cheese base, I swapped it out for mascarpone. It’s smooth, creamy, and oh-so delicious!

From start to finish, these Mini Blueberry Kiwi Tarts take just about 30 minutes to make. These cuties can also be made ahead of time, which is perfect for those summer barbecues or parties. Since I loooove blueberries, I used those, along with some fresh kiwi, since it gives these tarts such a pretty pop of color. But, it’s very easy to customize these depending on your tastes.

Mini Blueberry Kiwi Tarts

Yield: 6 mini tarts or 1 nine inch tart

These Mini Blueberry Kiwi Tarts start with a simple, vanilla crust that's packed with a creamy mascarpone filling and topping with fresh blueberries and kiwi. This easy, make-ahead dessert is perfect to serve for your next party or get-together!

Ingredients
 

CRUST

  • ½ cup powdered sugar
  • 1 ½ cups all-purpose flour
  • cups unsalted butter, softened and cut into small chunks
  • ½ teaspoon vanilla bean paste, or vanilla extract

FILLING

  • 1 cup mascarpone cheese
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla bean paste, or vanilla extract
  • cups heavy cream

TOPPING

  • Blueberries
  • Sliced kiwi

Instructions
 

  • Preheat oven to 350F. Lightly grease two 12-count mini tart pans with non-stick cooking spray. Alternatively, you can grease a 9 inch tart pan. Set aside.
  • In the bowl of a food processor, combine the powdered sugar, flour, butter, and vanilla. Process until mixture pulls away from sides and forms into a dough. You may need to add more flour.
  • Press dough into mini tart pans to form a crust. Bake for 8-10 minutes, or until lightly browned.
  • While crusts cool, beat the mascarpone cheese, powdered sugar, and vanilla in a large bowl with a hand mixer or stand mixer with fitted paddle attachment until smooth and creamy. Add heavy cream and beat until soft peaks form.
  • Spread filling into each tart. Top with blueberries and kiwi. Serve immediately or refrigerate until ready to serve.

If dough is too wet, add an additional 1-2 tablespoons (or more) of flour, if needed.
