Sometimes I feel like it’s almost impossible to get me moving on weekday mornings. Since I start work early, I’m up before it’s light outside and am rushing to get ready, grab breakfast, and be out the door in time. Even though I set my alarm clock extra early, I always feel like I never have enough time to relax before I head off to work. And it doesn’t help that I’m not a morning person, either. That’s why I always rely on delicious foods to get me going.
In an effort to have more peaceful mornings, I’ve been trying make my routine more calming. By starting the day off with breakfast and a hot cup of coffee, I feel like I can take a moment for myself and reflect on the day ahead of me. This makes me feel more prepared and less of a grump in the mornings, too.
So because I wanted to act on my new routine as soon as possible, I headed out to Walmart (my favorite store) to stock up on some essentials. One of the first spots that I always like to browse is the coffee aisle. Since I drink coffee almost every day of the week, I’m always looking for my favorite brands or new flavors to come out.
And when I spotted McCafé coffee, I just knew I had to try it out. Since it’s made with 100% Arabica Beans and comes in eight different flavors, I knew that McCafé is premium quality coffee. After I bought several McCafé coffee flavors (I just couldn’t decide which delicious flavor to get), I set out to buy the rest of the ingredients for my morning breakfast. When I got home, I eagerly started preparing these Mini Blueberry Cake Loaves. Filled with fresh blueberries and bursting with just the right amount of flavor, these loaves are soft, moist, and perfect for breakfast. And to top it off, I added this delectable chocolate drizzle. Pair this with a hot cup of McCafé coffee, and I knew I would enjoy my “me” time in the mornings. The medium roast flavor was smooth and flavorful, just the way I like my coffee and perfect to pair with my breakfast.
Just like most of my recipes, these Mini Blueberry Cake Loaves are so easy to make! In a large bowl, combine the melted butter, sugar, eggs, and vanilla. In a separate bowl, combine the flour, baking soda, and salt.
Stir half of the flour mixture into the wet ingredients, alternating with the milk. Then gently fold in the blueberries and pour into prepared mini loaf pan. Bake for about 20 minutes until golden brown on top and then remove from oven to let the Mini Blueberry Cake Loaves cool completely.
As the loaves are cooling, prepare the chocolate drizzle. Simply melt a bag of chocolate wafers (or chocolate chips) in a small bowl. Drizzle over the cooled loaves and get ready to devour!

Yields 12 mini loaves
Filled with fresh blueberries and bursting with just the right amount of flavor, these Mini Blueberry Loaves are soft, moist, and perfect for breakfast.

- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- Pinch of salt
- 1/4 cup coconut oil
- ¾ cup white sugar
- 1 egg
- 1 cup vanilla Greek yogurt
- ½ teaspoon vanilla extract
- 1 ½ cups fresh blueberries
- 2 cups milk chocolate chips
- Preheat oven to 375F. Lightly spray mini loaf tins with non-stick cooking spray. Set aside aside.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, combine the oil, sugar, egg, yogurt, and vanilla. Using an electic hand mixer or stand mixer with fitted paddle attachment, beat until smooth.
- Gently fold in blueberries.
- Pour mixture into prepared tins and bake for 15-18 minutes or until loaves are browned on top.
- While loaves are cooling, prepare chocolate glaze.
- Microwave chocolate wafers in a medium bowl for 1 minute, stirring every 15 seconds so not to burn.
- Once chocolate is smooth, drizzle over loaves.
- Serve immediately or cover until ready to serve.
