Not only am I sharing a chocolate treat today, but I thought I would jazz it up even more with some mint and brownie flavors.

How about that for a Wednesday?

It’s been way too long since I last made muddy buddies, but there’s a good reason for that. You see, I’m addicted, more like obsessed, with this snack. Set the bowl in front of me and I’ll devour it ALL. I have no shame. Nope, none at all.

So, even though I crave this tasty treat quite often, my willpower takes over and I move onto some other form of dessert. But, I figured that it’s time to cave and whip up another batch since St. Patrick’s Day is almost here. I mean, I am a food blogger, so that gives me the perfect excuse to make muddy buddies. Am I right?

And speaking of muddy buddies, do you call it that, or puppy chow? I always grew up calling it the latter, but as I got older, it seemed as if no one knew what puppy chow was. So, I converted to muddy buddies.

But, let’s get back to the most important part: these Mint Brownie Muddy Buddies! How about this for an easy and delicious St. Patrick’s Day treat?

Besides the sweet taste and satisfying crunch, these Mint Brownie Muddy Buddies are just the treat for when you need an afternoon pick-me-up. It also works as an easy dessert to serve for your St. Patrick’s Day celebration. Corned beef, beer, and muddy buddies…sounds pretty good to me!

And I’m sure you can guess that this sweet treat is a breeze to whip up! It’s also the perfect, no-bake treat, which makes me one happy girl.

I used Andes mint chips (found in the baking section of my grocery store) as the chocolate coating. After I tossed the cereal with the melted chocolate, I coated it with a layer of a boxed, dry brownie mix. And voila…these Mint Brownie Muddy Buddies were born. I also added in some mint M&Ms for color, as it pairs perfectly with the rich chocolate!

Mint Brownie Muddy Buddies

Ingredients

  • 6 cups Rice Chex Cereal
  • 1½ cup Andes Mint pieces
  • 1 cup boxed brownie mix dry mix only
  • ¼ cup powdered sugar
  • 1 cup mint M&Ms if desired

Instructions

  • Add 6 cups of cereal to a medium bowl. Set aside.
  • In a small bowl, melt mint pieces in the microwave, stirring frequently to avoid burning.
  • Once chocolate is melted, pour over cereal. Stir carefully to ensure that cereal is entirely coated.
  • Pour cereal into a large resealable bag. Add brownie mix, seal bag, and shake well.
  • Open bag and add powdered sugar. Shake well until cereal is thoroughly coated. Add M&Ms, if desired. Serve immediately or keep covered until ready to serve.
