My love for Mexican food runs deep. Tacos, enchiladas, burritos, and everything else in between floats my boat. I’m not too picky when it comes to this cuisine and often crave it at the end of a long week. And luckily, the hubster is the same way. We eat Mexican food at least once or twice a month and could probably eat it even more if we let ourselves! There’s just nothing like the taste of the fresh cuisine, paired with some chips and salsa and maybe a margarita (or two) to go along with it. Am I right or am I right?
So it’s no surprise that the flavors of this One Pan Taco Macaroni and Cheese was an instant winner in my house. Fresh, full of classic Mexican flavor, and made in just one pan, this creamy dish is a favorite creation of mine. It’s easy to whip and contains simple ingredients, which is perfect for busy weeknights when you just don’t feel like heading out to a restaurant.
Besides craving Mexican food quite often, my inspiration for this dish came from my Creamy Stovetop Macaroni and Cheese. It quickly became my most pinned (and popular) recipe on my blog. So because that was such a hit, I decided to spin it into a more unique dish, filled with lots of flavor and made in only one pan.
And the best part about this One Pan Taco Macaroni and Cheese (besides being a breeze to whip up) is that it’s so easy to customize depending on your tastes. I chose to add in tomatoes only (partly because the hubster is just a teeny bit picky about certain foods), but you could easily throw in some black olives, onions, jalapenos, whatever tickles your fancy. It’s ready in just under a half an hour and there’s only one pan to clean. And that means there are less dishes for you to wash and more time to relax. Sounds good, right?
To prepare this flavorful dish, you’ll want to first brown the ground beef, crumble, and then drain. Return it to the same skillet, and in some beef broth, water, taco seasoning, and noodles. Let that simmer for 10-15 minutes, or until the noodles are tender. Top with some shredded cheddar cheese and tomatoes and let the heat do its magic. Within minutes, you’ll have a creamy and delicious dish that is ready to be devoured.

This One Pan Taco Macaroni and Cheese is fresh, full of classic Mexican flavor, and ready in no time!

- 1 pound lean ground beef
- 1 teaspoon minced onion
- 1/2 teaspoon garlic powder
- 4 tablespoons taco seasoning
- 3 cups elbow macaroni
- 2 cups beef broth
- 1 cup water
- 2 cups cherry tomatoes, diced
- 2-3 cups shredded cheddar cheese
- Add ground beef, minced onion and garlic powder to a large skillet. Brown and crumble beef. Drain and return to same pan.
- Stir in taco seasoning and 1/2 cup of water. Return to a boil and let simmer for 5 minutes.
- Add in beef broth, 1/2 cup water, and pasta. Simmer for 8-12 minutes, or until noodles are tender.
- Top mixture with tomatoes and cheese. Cover and let sit for 5 minutes or until cheese is melted.
- Remove cover and stir.
- Serve immediately.
