Well, we’ve officially made it halfway through the week.
If you’re anything like me, the countdown to the weekend starts on Monday, so we’re just two days away! I may seem just a little too excited that Friday is almost here, but that’s when I can really relax and enjoy myself. No busy weeknight plans, rushing around before work in the mornings, or waking up at the crack of dawn.
Since the hubster and I are usually exhausted come the end of the work week, our Friday nights usually consist of dinner and a movie or something low-key.
We often relax with an appetizer to start the weekend off right. And with my mind on thoughts of spring weather and relaxing, I immediately wanted to make a warm weather dish. Something light, fresh, and full of endless possibilities.
So it was almost a no-brainer when this Pepperoni Bruschetta came to mind.
The hubster and I just can’t get enough of Hormel pepperoni, as its always stocked in our fridge! And it’s so versatile, too! We use the pepperoni on so many different dishes, sandwiches, and casseroles. I also like to munch on it when I need a quick afternoon snack or something to tide me over until dinner.
And because we’re also bruschetta fanatics (we practically order it as an appetizer every time we go out to eat), this easy spring-time dish was just what we needed for a Friday night.

I was so excited to use Hormel pepperoni in bruschetta because it would give it flavor and really spice it up! The pepperoni pairs so well with the with the other flavorful ingredients. And that just screams spring and warmer weather, right?
Because this Pepperoni Bruschetta takes just minutes to whip up, you’ll have a delicious appetizer ready in no time! So that means less prep work and less dishes to wash. Sounds pretty good, right? To start, we’ll make the zesty Pepperoni Bruschetta filling. Simply combine the Hormel Pepperoni Minis, chopped tomatoes, basil, garlic, olive oil, salt and pepper.
Next, you’ll want to slice a French baguette into thin slices. Spread them on a baking pan in an even layer and drizzle with a touch of olive oil.
Using your broiler, toast the bread until golden brown.
Remove from the oven. Top with a few Hormel Pepperoni and then the bruschetta mixture. Lightly drizzle with a balsamic glaze and your spring-time appetizer is ready to munch on!

- ¾ cup mini pepperoni
- ¼ cup olive oil
- 4 medium tomatoes diced
- 2 tablespoons fresh basil leaves chopped
- 1 teaspoon minced garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 loaf french bread
- ¼ cup pepperoni
- 4-6 tablespoons balsamic glaze for drizzle
- Set oven to medium broil setting.
- In a medium bowl, combine the mini pepperoni, olive oil, tomatoes, basil, garlic, salt, and pepper. Stir thoroughly. Set aside.
- Cut bread into thin slices and place on a large baking tray. Lightly drizzle with olive oil and toast bread until broiler until browned.
- Remove from oven and place 2 pieces of pepperoni on each slice. Then top with 1 tablespoon of bruschetta mixture on each slice. Drizzle with balsamic glaze and serve immediately.
