Happy Friday, friends! As you’re reading this, I’m up in the beautiful state of Wisconsin, enjoying the rustic country for the weekend. Just like earlier in June, the hubster and I drove up last night to spend the weekend having some fun in the sun. On the agenda: relaxation! I’m hoping for some sunny weather so that I can work on my tan. I’m a tan-burn girl, so I get a combination of a tan and burn, but I’ll take what I can get! Since I won’t be back until Monday, I will respond to all of your comments as soon as I can!
I thought today would be a great opportunity for me to share another salad that I’m crazy about, pasta salad! It’s a summer staple, one that’s always present at bbq’s, get togethers, and other summer events. Or in my case, a lunchtime favorite! I love whipping up pasta salads on the weekend, and then dividing it into separate containers to take for my lunches at work during the week. I am all about creating new pasta combinations, and I’ve made a sure winner this time!
Pesto Mozzarella Pasta Salad! It’s a mouthful (no pun intended), but so delicious and full of flavor! And if you’re anything like me, you can eat pesto on just about anything, from salads, to pasta, and chicken. So when I discovered a new spread from Hidden Valley, I was eager to try it out. Thus, this salad was created. Creamy Parmesan basil pesto, tossed with fresh pasta, tomatoes, and mozzarella cheese creates this zesty Pesto Pasta Mozzarella Salad! Easy to whip up, this dish is perfect for your next get-together, summer event, or meal accompaniment.
Just like my Corn and Tomato Salad and Strawberry Spinach Salad, this Pesto Mozzarella Pasta Salad is a cinch to throw together! The key ingredient is the Parmesan Basil Pesto Sandwich Spread & Dip from Hidden Valley. It’s fairly new and so tasty! You can find it in the dressing and condiment aisle at the grocery store. Since I was in the mood for a salad, I decided to toss this spread with some pasta to create a creamy dressing.
Simply add in some cherry tomatoes, fresh mozzarella cheese, black olives, olive oil, and that’s it! This Pesto Mozzarella Pasta Salad is ready in a matter of minutes. Serve at room temperature or chilled, and you will be amazed at how flavorful this is. The pesto spread and fresh mozzarella cheese creates a tangy bite that is hard to resist.
Once you dig into this Pesto Mozzarella Pasta Salad, your taste buds will be thanking you. Trust me, friends!
