**November 2018 update! this recipe was originally posted in November 2014. i decided that the photos desperately needed updating, so i reshot the recipe (but still kept the ingredient list and directions the same). i also kept the original post/story below that i wrote four year ago!**

The holiday season will be here before you know it. Stores will open on Thanksgiving for their pre-Black Friday sales, just waiting for the madness to start. Hoards of people will be lined up, waiting to get the newest technology gadget or scouring the stores for the best deals.

And while I love a good sale, I’m not one to stand in line for hours on end. I don’t like the crowded malls and would rather shop at night or from the convenience of my own home (gotta love cyber Monday).

While those people who are crazy for deals are out getting a head start on their holiday shopping, the hubster and I will be putting up our Christmas decorations. It’s a tradition that I look forward to every year, complete with Christmas music playing in the background.

And once our tree is lit and decorated, we love to sit and admire its beauty. There’s nothing quite like gazing at the tree with a cup of hot chocolate in hand, and this Pumpkin Peanut Butter Bread to dunk in it.

I love to make pumpkin bread every year around Thanksgiving. It’s such a classic dessert that most people enjoy. And while I love the plain pumpkin kind, I decided to switch it up this year.

With all of that peanut buttery goodness, this chocolate chip pumpkin bread is guaranteed to become a holiday favorite. 

And the aroma? Heavenly. 

If you’re a pumpkin bread lover like me, then you’ll flip over this easy recipe! Serve it for Thanksgiving, Christmas, or anytime in between, and it’s sure to be a crowd-pleaser.

Cooking Tips:

  • When buying the pumpkin, be sure to get canned pumpkin and not pumpkin pie mix! Otherwise your muffins will be very sweet!
  • Be sure not to over stir the bread mixture! If you over stir it, you can create bubbles in the mixture which will leave a series of pockets in your bread.
  • If the peanut butter is too thick or difficult to stir, place it in a microwave safe bowl and warm it in the microwave for 8-10 seconds to melt it a little.

Variations:

  • Try different chocolate chips! Use milk chocolate or even white chocolate!
  • If you like nuts in your bread, try using crunchy peanut butter!
  • Sub half the flour for whole wheat flour to add a little extra fiber to this peanut butter bread!

How to Make Pumpkin Spice Peanut Butter Bread

  • Preheat the oven to 350 degrees F. Lightly spray two loaf pans (or one loaf pan and a 12 cup muffin tin) with non-stick cooking spray. Set both aside.
  • In a medium bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and pumpkin pie spice. Set aside.
  • In a large bowl, mix together the pumpkin puree, eggs, oil, water, and sugar until thoroughly combined.
  • Stir the dry ingredients into the pumpkin mixture until just blended, then fold in the peanut butter and 1 cup of chocolate chips.
  • Pour half of the batter into each loaf pan (or half into one loaf pan and evenly divide the rest into the muffin tins). Sprinkle the remaining 2 tablespoons of chocolate chips over the top of the loaves (1 tablespoon per pan).
  • Bake each pan for 50 minutes to 1 hour, or until golden brown and a toothpick inserted into the middle of the loaf comes out clean. The muffins will take less time to bake – check them after 20 minutes.
  • Remove from the oven and let the bread cool in the pans for 15 minutes. Then remove the bread from the pans and move to a wire rack to cool completely. Enjoy!

Ingredients
 

  • cups all-purpose flour
  • 2 teaspoons baking soda
  • teaspoons salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 2 teaspoons pumpkin pie spice
  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 1 cup melted coconut oil
  • cup water
  • 2 cups white sugar
  • 1 cup creamy peanut butter
  • 1 cup plus 2 tablespoons dark chocolate chips

Instructions
