I don’t make a lot of pies around here, but when I do, you can be sure that they’re worth it.

It’s actually kind of funny that I don’t make more pies, because I will often take pie over cake any day of the week.

Let me rephrase, it depends on the type of cake. I’ve mentioned before that I’m not a huge fan of frosting, which is why most of the cake recipes that you’ll find on Pumpkin ‘N  Spice are cheesecakes, coffee cakes, and others that don’t involve piles of frosting.

I do love a good homemade frosting every now and then, but for the most part, it’s the actual cake part that I enjoy the best. And that’s why pie is such a great option. No frosting, it can be fruit based, chocolate based, or in this case, pumpkin based!

If you like pumpkin pie, then this easy, Pumpkin White Chocolate Pie was made for you. I got this recipe from Paula Deen’s Fall Baking magazine from 2014 and have been hooked ever since. The only tweak I made to this recipe was to add more pumpkin pie spice because it really enhances the flavor.

Not only is this pie simple to make, but it’s also no-bake. Or, almost no-bake. You do have to bake the crust, but that takes just about 10 minutes and no prep time, as I used a pre-made crust.

Have you tried white chocolate pudding and pumpkin together? It’s a flavor combination that was just meant to be together. And it takes this Pumpkin White Chocolate Pie to a whole new dessert level. Every bite is smooth and creamy, with a sweet pumpkin and white chocolate taste.

Swoon. It doesn’t get much better than that. Unless you count the white chocolate shavings on top of this pie. You could always skip that, but, let’s not, ok? It just gives this pie the perfect, finishing touch.

Pumpkin White Chocolate Pie

This Pumpkin White Chocolate Pie is filled with a creamy mixture of pumpkin and white chocolate pudding that's swirled to perfection. It's smooth, silky, and an easy, no-bake dessert!

Ingredients
 

  • 1 refrigerated pie crust, from a 14.3 ounce box
  • cups milk, any kind, I used 2%
  • 1 cup pure pumpkin
  • 3 (3.3 ounce) boxes white chocolate instant pudding mix
  • 1 teaspoon pumpkin pie spice
  • White chocolate shavings for topping

Instructions
 

  • Preheat oven to 425F.
  • Unroll pie crust and fit into a 9-inch deep pie plate. Fold the edges under and crimp. Prick bottom and sides with a fork. Bake for 10-12 minutes, or until crust is golden brown. Let cool completely.
  • In a large bowl, whisk milk, pumpkin, pudding mix, and pumpkin pie spice until smooth and well-blended.
  • Pour into prepared pie crust. Cover and refrigerate for at least one hour, or until firm.
  • Top with white chocolate shavings just before serving, if desired.
