I was watching an old episode of The Kitchen on Food Network a few weeks ago and they had a segment where the chefs talked about foods they were over (or tired of), and foods they still couldn’t get enough of.

And that got me thinking about quinoa. It seems to be all the rage still, even though it first became most popular (at least in my mind) several years ago.

So tell me, are you over quinoa, or are you still going strong with this grain?

I, for one, am a quinoa lover for life. I love adding it to bowls, salads, and even breakfast dishes. It’s full of nutrition, easy to make, and extremely versatile.

And after making this Raspberry Chia Jam and wanting to add it to just about everything, I decided it would make the perfect addition to this Raspberry Jam Quinoa Parfait.

This parfait combines all of my current obsessions: vanilla Greek yogurt (I practically eat it every day), Raspberry Chia Jam (please tell me you’re going to make this soon?), and quinoa. And with just three ingredients (three!), you can have this dish ready in just minutes.

The raspberry jam gives this dish a hint of sweetness and a pretty pop of color, while the creamy Greek yogurt and hearty quinoa add the perfect texture (and taste).

I like to prepare a few of these Raspberry Jam Quinoa Parfaits on Sunday and then have them ready to devour for breakfast or an afternoon snack throughout the week. It’s full of protein, nutrients, and has the perfect amount of flavor to satisfy my sweet tooth.

Raspberry Jam Quinoa Parfait

Ingredients

  • 1 cup dry quinoa rinsed and drained
  • 2 cups water
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 2 cups vanilla Greek yogurt
  • 1 cup Raspberry Chia Jam

Instructions

  • Cook quinoa according to package directions. Remove from heat and stir in vanilla extract. Set quinoa aside to cool. If making parfaits in advance, refrigerate quinoa until needed.
  • To prepare parfait, spoon about 1/2 cup yogurt onto the bottom of a mason jar or glass, followed by 1/4 cup quinoa, and 3 tablespoons of jam. Repeat with another layer, or as many as you desire. Repeat process with second mason or glass.
  • Serve immediately or refrigerate until ready to serve.

    This is so beautiful, Gayle! I love quinoa too and will never tire of it. So healthy and I’ve yet to have for breakfast; that needs to change! I love all foods. Though, there was a couple of times that I was on a real seaweed salad kick and I bought a couple of big tubs consecutively at Costco and got soooooo sick of it. Still, today, I can’t think of eating it. Give me a while and I’ll be ok, but I just ate way to much. I guess too much of a good thing isn’t good, right 😉 ? Pinning this, though, and will be trying soon. Have a lovely weekend, my friend!

    This is totally my kind of breakfast! I love to use leftover quinoa in parfaits like this because I always seem to cook too much quinoa for dinner. The overnight parfait is the perfect solution. Your raspberry version looks amazing!

    I’m still happily enjoying quinoa! I was kind of hoping it’d turn into a staple… ya know, gently transitioning outta “trendy” mode. Meanwhile, I was SO hoping you’d add your jam to all the things!! I love how, when you create a great basic recipe, you can just start adding it to everything!     I’ve loved quinoa for a longggg time now, too, and don’t think I’ll ever get tired of it! It’s so perfect when you want a carb, but still want to be healthy. I LOVE this parfait… It’s such a pretty color and sounds sooo tasty!

    It always makes me laugh when chefs or magazines say what foods are no longer hot. When I like things I like them…I don’t care about trends! Quinoa will always be a staple in my pantry and I love breakfast versions. This parfait is so pretty and it’s going on my must-make list!
