Iโ€™m a planner. Organized, not too spontaneous, and just a little bit of a control-freak. Just a little! I like to plan everything from  what clothes Iโ€™m going to wear for the week (making sure my outfit is laid out the night before), what errands I want to run, what recipes I want to test, and what plans Iโ€™m going to make with family or friends.

But one area that I have a hard time finding ideas for are new side dishes. The hubster and I try to eat healthy for the most part and usually end up eating the same types of side dishes. Asparagus, green beans, or some other quick veggie. And while I love those greens, I decided to cook up one of my other favorites, cauliflower!

Ingredients for Roasted Garlic Cauliflower 

This is a fun and creative way to jazz up this veggie! And even if you’re not a huge fan of cauliflower, I guarantee you’ll like this! The garlic, paired with a touch of Parmesan, creates a delicious flavor combination.

Here’s what you’ll need for this roasted cauliflower side dish: 

  • Cauliflower 
  • Olive oil
  • Garlic powder
  • Salt and pepper 
  • Parmesan cheese 

How to Make Roasted Garlic Cauliflower 

The prep time for this roasted cauliflower couldn’t be easier! Here’s how to cook cauliflower in the oven: 

  1. Cut up a head pf cauliflower into pieces and spread onto a baking sheet.
  2. Drizzle some olive oil on top, followed by garlic powder, salt and pepper.
  3. Roast in the oven for about 20 minutes and then top with some grated Parmesan.

One bite and you’ll be hooked! The easy garlic cauliflower and combination of spices creates a delicious side dish, perfect to fit any meal!

Can You Roast Frozen Cauliflower? 

Technically yes, but I much prefer roasting fresh cauliflower. If roasting frozen cauliflower, don’t thaw it first; it can be roasted from frozen, but you may need to add a few minutes to the cook time. 

Can I Prep This Cauliflower Side Dish in Advance? 

For the best roasted cauliflower, I recommend serving this dish right away. However, you can cut the cauliflower into florets ahead of time and store them in the fridge until you’re ready to roast them! 

Tips for Making Garlic Roasted Cauliflower 

  • Buy whatever size cauliflower you prefer. The roast time won’t be affected. 
  • Feel free to use this recipe as a jumping off point for making cauliflower in the oven. Use any blend of spices you’d like! 
  • Freshly grated Parmesan works best in this recipe.

Roasted Garlic Cauliflower

Ingredients
 

  • 1 head of cauliflower, , cut into small pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, , to taste
  • 3 tablespoons grated Parmesan cheese

Instructions
 

  • Preheat oven to 425F.
  • Spread cauliflower in a single layer onto a baking tray.
  • Drizzle with olive oil. Lightly toss with a spoon to ensure each piece is coated.
  • Sprinkle garlic powder, salt, and pepper on top.
  • Bake for 20-25 minutes or until tops are browned, stirring cauliflower half way through to ensure even baking.
  • Remove from oven and top with Parmesan cheese. Serve immediately.
