Now that the weather is finally getting warmer (hello, spring!), I’ve been cravings lots of fresh fruits and vegetables.

I do love ordering it in restaurants, though. In fact, my favorite restaurant (Cooper’s Hawk Winery for those of you who are lucky to have it around you) makes the most delicious steamed broccoli. The hubster, who doesn’t like broccoli (I know, I know), even likes it. He always orders a filet there and it comes with a side of their fresh, steamed broccoli. So you know what that means…I steal it from him (or, ahem share with him), and savor every last bite.

If you’ve been hanging around here long enough, you know that easy (and delicious) recipes are the name of my game. And this Roasted Garlic Parmesan Broccoli couldn’t get any easier to prepare! It’s also filled with just the right amount of flavor, which will leave you coming back for more.

To start, you’ll cut two heads of broccoli into pieces and spread onto a large baking pan. Then, you’ll drizzle with some oil oil and sprinkle some minced garlic and grated Parmesan cheese on top. Toss everything together and then bake until tender.

Ingredients
 

  • 4 cups broccoli florets, about 2 heads of broccoli
  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ½ cup grated Parmesan cheese, divided
  • Salt and pepper, to taste
  • Juice of one lemon, if desired

Instructions
 

  • Preheat oven to 425°F. Line a large baking pan with parchment paper or coat with non-stick cooking spray. Place broccoli onto prepared pan.
  • Add olive oil, minced garlic 1/4 cup grated Parmesan cheese, salt and pepper. Toss to combine, then spread in an even layer on baking sheet.
  • Bake for 12-15 minutes, or until tender. Remove from oven, sprinkle with remaining Parmesan cheese, and squeeze lemon juice on top (if desired).
