Remember when I mentioned my new kindle last week?
I’ve kinda-sorta fallen in love with it. I thought I would use it more for surfing the internet or finding a new ideas on Pinterest, but I was wrong.
My kindle has “rekindled” my love for reading. I used to read all the time when I was younger. Growing up, I was always checking out books from the library or adding a new favorite to my collection. And I’m totally going to date myself, but “The Babysitter’s Club” was my favorite series! I even started my own club with my best-friend when we were little…but that’s a story for another day.
Anyways, although I still love to read, life gets busy and I usually don’t pick up a book unless I’m on an airplane or relaxing on the beach.
But when I started using my kindle, it made me want to carve time out of my day just to read. Kind of like an incentive to start a new book. After all, it is fun to read a book electronically. Even though I still love to hold an actual book and smell the pages, it’s exciting to have books right at your fingertips from a kindle.
And once I start reading a book, I get sucked in. I have to keep reading it and often finish books in a day or two.
Since I’ve discovered my new-found love for reading, I’ve incorporated it into my nightly routine. I often relax with a cup of tea and my kindle for about an hour before I go to bed and just read. It really relaxes me and gives me some “me” time.
Since I’m loving my kindle so much, I’ve decided to take a break (or two) during the day to read. This gets my mind off of blog tasks and helps me refresh, something I definitely need! So when I took a break last week, I decided to whip up a clean-eating recipe to munch on while I read my latest book.
Something that I always keep stocked in my pantry is Bumble Bee® Solid White Albacore in Water. With the light texture and fresh taste, this tuna is the perfect ingredient to incorporate into just about any recipe. So I guess it’s no surprise that this tuna is often my go-to lunch, right? From the moment I pop open the can of Bumble Bee® Solid White Albacore in Water, I can see the quality ingredients, just waiting to be used in a variety of recipes. And that’s where this tuna melt comes in.
This Salsa Tuna Melt is full of flavor and comes together in minutes. Packed with tuna, zesty salsa, and cream cheese, this easy meal is a lighter version of the classic dish!
Besides being slightly healthier than a regular tuna melt, this version is flavored with Bumble Bee® Solid White Albacore, a touch of cream cheese, and salsa. Just three easy ingredients, plus some cheese, that tops the English muffins and gets toasted to perfection. How about that for clean eating?
Like most of my recipes, this Salsa Tuna Melt is a breeze to whip up! But you knew that was coming, right? Simply mix together some low-fat cream cheese and salsa. Gently fold in the Bumble Bee® Solid White Albacore and spread onto halved English muffin slices. Top the muffins with some shredded cheese and then broil until melted.
Within minutes, this easy meal is ready to be devoured. And it’s also a meal that you can feel good about eating. With simple, quality ingredients, this Salsa Tuna Melt makes a delicious lunch, dinner, or late night snack. It also makes the perfect companion for when I’m sucked into reading my kindle!

Salsa Tuna Melt
Ingredients
- 2 whole wheat English muffins, sliced and toasted
- 3 tablespoons low-fat cream cheese, softened
- 3 tablespoons salsa, any kind
- Salt and pepper, to taste
- 1 can (12 ounce) Bumble Bee® Solid White Albacore in Water, drained, or tuna of choice
- 4 tablespoons shredded cheddar cheese, divided
Instructions
- Set your oven broiler to medium heat.
- In a small bowl, combine the cream cheese, salsa, salt and pepper. Gently fold in Bumble Bee® Solid White Albacore. Spread tuna mixture evenly between the English muffin slices.
- Top each slice with 1 tablespoon shredded cheese. Place English muffin slices onto an ungreased baking pan.
- Broil on medium heat for 5-6 minutes, or until cheese is melted. Remove from oven and serve immediately.
Simple and quick to do! That’s always a win in my book. This looks super tasty! I would love to devour that pan of them right now 😉

I love reading, but I had so many that it was starting to look like the land that time forgot, so I switched over to a kindle. ???? Plus lugging around a kindle is so much easier than those huge Outlander novels.
