If you’ve been following me long enough, you know that I’m a big fan of baked oatmeal. So, I took on the challenge to make an easier, microwave baked oatmeal version that’s the perfect amount for just one person!

So if you’re cooking for one, this baked oatmeal is the perfect solution for when you want a hot breakfast, without all of the prep work. It’s simple, fast, and full of flavor. And fun to make, too!

Ingredients in the Microwave Baked Oatmeal 

For this strawberry banana oatmeal recipe, you’ll need the following ingredients: 

  • Old-fashioned oats
  • Granulated sugar
  • Baking powder
  • Salt
  • Banana 
  • Egg
  • Milk
  • Vanilla extract 
  • Strawberries 

Can the Egg Be Omitted? 

The egg in this single serve baked oatmeal recipe helps bind it together and make it taste like baked oatmeal rather than microwave oatmeal.

However, you are likely fine to omit the egg entirely or replace it with a flax egg. Just note that the consistency of the microwave baked oatmeal will be different from mine. 

Can Different Berries Be Used? 

Yes, feel free to mix and match the berries used in this recipe! I love making strawberry banana oatmeal, but blueberries, raspberries, and even cherries would work well here.

How to Make Microwave Baked Oatmeal

This strawberry banana oatmeal in a mug is packed with flavor. From the hearty oats, sweet banana and fresh strawberries, you’ll love the convenience (and sweet taste) of a hot breakfast, made right in your microwave.

You can mix everything together in a microwavable mug or bowl, and then just pop it in the microwave! 

  1. Coat a large, microwavable mug with cooking spray. Add the oats, sugar, baking powder, and salt to the mug. Stir to combine.
  2. Add the banana, egg, milk, and vanilla extract to the oats. Stir until mixed in. Gently fold in the strawberries.
  3. Microwave on medium power for 3 to 3 1/2 minutes, or until the center is mostly set.
  4. Let the single serve oatmeal stand in the microwave for 1 minute.

Within minutes, your deliciously warm oatmeal is waiting to be devoured. It’s so easy to make oatmeal in the microwave!

Tips for Making Single Serve Baked Oatmeal

  • I recommend using old-fashioned oats in this recipe. Steel cut oats don’t cook as quickly as old-fashioned, and instant oats cook too fast. 
  • This microwave baked oatmeal is not overly sweet. If you would like a sweeter taste, increase the amount of sugar by 1/2 teaspoon.
  • Alternatively, you can sweeten the oatmeal with honey or maple syrup, if desired.

Ingredients
 

  • ½ cup old-fashioned oats
  • 1 teaspoon granulated sugar, (see notes below)
  • ¼ teaspoon baking powder
  • Dash of salt
  • ½ medium banana, , mashed
  • 1 egg
  • 3 tablespoons milk, (any kind)
  • ¼ teaspoon vanilla extract
  • 3 medium strawberries, , diced

Instructions
 

  • Coat a large, microwavable mug or small bowl with cooking spray. Add oats, sugar, baking powder, and salt to mug. Stir to combine.
  • Add banana, egg, milk, and vanilla extract to oats. Stir until mixed in. Gently fold in strawberries.
  • Microwave on medium power for 3-3 1/2 minutes, or until center is mostly set. Let stand in microwave for 1 minute.
  • Serve immediately.

Notes

  • This baked oatmeal is not overly sweet. If you would like a sweeter taste, increase the amount of sugar by 1/2 teaspoon.
