Breakfast is my favorite meal of the day. I’ve said that before, and I’ll probably continue to keep saying that.

But, let me clarify. While I do love cereal, oatmeal, toast, etc…all my usual breakfast foods, it’s my favorite meal when it involves something like frittatas, overnight oats, french toast bakes, and pancakes. Not just plain ‘ole cereal or toast with jelly.

Since I’m not the best at eating a regular breakfast (mine usually consists of yogurt or cereal and coffee), I love to whip up a more savory breakfast on the weekends. And that’s where these Strawberry Greek Yogurt Pancakes come into play.

See, I do love pancakes, but I have to be in the mood for them. Whenever I go out to breakfast, I usually get some sort of skillet with eggs and hash browns, or an omelet, or something along those lines. The hubster, though, he loves his eggs with a side of pancakes. And when I see those pancakes, my cravings kick in.

Now, you may remember these Blueberry Greek Yogurt Pancakes. These quickly became one of the most popular recipes on Pumpkin ‘N Spice, and for good reason! Soft, thick, fluffy, and on the healthier side. That’s a winning pancake in my opinion!

So, it was time to revamp my old favorite into my new favorite kind of pancake!

If you’re on board the pancake train all the time, then you need to try these Strawberry Greek Yogurt Pancakes. What I love about these are the thick and fluffy texture. I dare you to find a thicker, softer homemade pancake.

And the Greek yogurt. Let’s not forget about that! I love sneaking it into dishes for a healthier alternative to sour cream. And with these pancakes, it helps with the thickness and soft texture.

And last, but certainly not least, the strawberries. Loaded with juicy strawberries and topped with a strawberry glaze, you really can’t get much better than that.

Ingredients in Strawberry Pancakes 

To make the actual strawberry Greek yogurt pancakes, you’ll need the following ingredients:

  • All-purpose flour
  • Baking powder & baking soda
  • Salt
  • Vanilla Greek yogurt
  • Egg
  • Milk
  • Vanilla bean paste (or extract)
  • Strawberries 
  • Butter

And to make the strawberry topping for the pancakes, you’ll need: 

How to Make Strawberry Pancakes 

Both the homemade yogurt pancakes and the strawberry sauce for the pancakes are so easy to make! 

  1. In a large bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  2. In a medium bowl, whisk together yogurt, egg, milk, and vanilla extract.
  3. Stir wet ingredients into dry ingredients until just combined. Gently fold in strawberries.
  4. Melt butter in a large griddle pan. Pour 1/4 cup of pancake mixture onto hot griddle. Cook until golden on both sides.
  5. While the pancakes are cooking, prepare strawberry sauce. Combine the strawberries, water, sugar, and vanilla into a medium pot.
  6. Bring mixture to a boil, then cover and simmer until soft and thick, about 15 minutes.

Can I Use Plain Greek Yogurt? 

Yes, but you’ll lose some of the sweetness and vanilla flavor in the batter. You may want to add a tablespoon of sugar to the batter to compensate. Or, just drizzle more maple syrup on top! 

Can I Use Frozen Strawberries? 

Yes, but you’ll need to thaw and drain them before dicing them. 

Tips for Making Greek Yogurt Pancakes 

  • These pancakes are thick! The cooking time may take slightly longer than regular pancakes because of the thick texture.
  • Fresh or frozen strawberries work perfectly for these pancakes.
  • Save those leftovers! These pancakes make a delicious breakfast (or dinner) later in the week.

Ingredients
 

Pancakes:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups vanilla Greek yogurt
  • 1 egg
  • 1 cup milk, (any kind)
  • 1 teaspoon vanilla bean paste, (or vanilla extract)
  • 1 cup diced strawberries, (fresh or frozen)
  • 2 tablespoons butter , (or oil)

Strawberry Sauce:

  • 1 cup strawberries, (fresh or frozen)
  • ½ cup water
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla bean paste, (or vanilla extract)

Instructions
 

For the pancakes:

  • In a large bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  • In a medium bowl, whisk together yogurt, egg, milk, and vanilla extract.
  • Stir wet ingredients into dry ingredients until just combined. Gently fold in strawberries.
  • Melt butter in a large griddle pan. Alternatively, heat oil in pan.
  • Pour 1/4 cup of pancake mixture onto hot griddle. Cook for 2 minutes, or until edges begin to bubble and the bottom turns golden brown. Gently flip over to other side and let cook for another 1-2 minutes. Repeat with remaining batter until all pancakes are cooked.

For the strawberry sauce:

  • While the pancakes are cooking, prepare strawberry sauce (can also be made ahead of time). Combine the strawberries, water, sugar, and vanilla into a medium pot.
  • Bring mixture to a boil, then cover and simmer until soft and thick, about 15 minutes. Pour sauce over pancakes when ready to serve.
