Even though fall is almost officially here, it’s still the dog days of summer here in the Midwest.

Speaking of dogs, if you’ve been following me on Instagram or Snapchat, then you probably noticed that the hubster and I just adopted a dog a few weeks ago!

It’s something that we’ve been wanting to do for a long time, and now that we’re settled into our new house, we found the perfect dog to rescue. Callie is a black lab/beagle mix, weighs about 28 pounds, and is the sweetest little thing. She loves to play, sleep on her back with her legs sprawled out, and follow me all around the house. Callie also LOVES the dog park! I try to take her there every day so that she can play with her furry friends.

Callie keeps me company in the kitchen when I’m baking up a storm, she keeps watch out my home office window and lays by my feet when I’m working on blogging tasks. We started working with her on some obedience commands and are slowly getting walking on a leash to a more manageable task. So, needless to say, it’s been a busy few weeks for us!

Since I try to take a break (or two) every day in between blog tasks and recipe testing, I’ve been craving something that is both refreshing and delicious. Smoothies and shakes often do the trick, but ever since I stumbled upon International Delight Iced Coffee in Mocha and Caramel Macchiato flavors at Walmart, I’ve been hooked.

I found International Delight Iced Coffee in the refrigerated tea/juice section of Walmart and have been enjoying the affordable and convenient way to get my caffeine fix. It has the coffeehouse taste, without the coffeehouse hassle.

These Strawberry Mocha Pops are filled with mocha iced coffee and topped with a sweet strawberry layer. With just a few ingredients and hardly any prep work, this is the perfect treat to satisfy you sweet tooth!

It’s also fridge-friendly and ready-to-drink when poured over ice, especially on these hot summer days.  International Delight Iced Coffee is also perfect to use in a variety of recipes. This is the most delicious way to get your dose of iced coffee, without leaving the house, any time of the year.

After stocking up on some International Delight Iced Coffee in Caramel Macchiato to enjoy over ice, and International Delight Iced Coffee in Mocha to use in a frozen treat, I headed home to get creative in the kitchen.

Since it’s still summer and the heat isn’t going away anytime soon, I thought these pops would be perfect to cool off with, in addition to satisfying my caffeine cravings.

These Strawberry Mocha Pops are filled with mocha iced coffee and topped with a sweet strawberry layer. With just a few ingredients and hardly any prep work, this is the perfect treat to satisfy you sweet tooth!

And like most of my recipes, these Strawberry Mocha Pop are a breeze to whip up! Add some frzoen strawberries, water, and white sugar to the canister of a blender. Blend until smooth and then pour into some pop molds. Place in the freezer and freeze for about 20-25 minutes, or until mostly solid.

Then, remove the pops from freezer, pour some International Delight Iced Coffee in Mocha over the strawberry layer, and then freeze until firm. Told you this was easy!

These Strawberry Mocha pops are slightly sweet and pack a mocha punch that is perfect for coffee lovers everywhere. With just four ingredients, you can whip up this easy sweet treat for whenever the craving strikes.

Strawberry Mocha Pops

These Strawberry Mocha Pops are filled with mocha iced coffee and topped with a sweet strawberry layer. With just a few ingredients and hardly any prep work, this is the perfect treat to satisfy you sweet tooth!

Ingredients

  • ¾ cup frozen strawberries
  • 1 cup water
  • ½ tablespoon white sugar
  • 2 cups International Delight Iced Coffee in Mocha

Instructions

  • In the canister of a blender, add the strawberries, water, and white sugar. Blend until completely smooth.
  • Pour into pop molds, filling about 1/3 of the way. Freeze for about 20-25 minutes, or until mostly solid.
  • Remove from freezer and pour International Delight Iced Coffee in Mocha over strawberry layer, filling to the top of mold.
  • Freeze for about 20-25 minutes, or until starts to solidify. Add pop stick and freeze until sold, about 2-3 hours.

    Congrats on adding Callie to your family! It must be nice to have a dog at your feet while you work. I have my kids pulling on me and screaming instead. :) These are gorgeous. Love that they have that fun splash of color!

    Callie is just the cutest! And I love the name! I've seen some of her pics and she looks like a little doll! Fur babies are such great company, aren't they? Our little guy follows us around everywhere too...we say he is addicted to us...though, I wonder if we're addicted to him, lol :D These pops are just the prettiest pops, Gayle!!     I can't believe it's still summer in the Midwest? In Arizona, it's perfectly normal to be 100 degrees until Halloween. At least you have delicious treats to make up for the heat!

    Eeeep! She's a beagle mix!!!! We are kinda obsessed with beagles in case you can't tell! haha Dogs are just the best! And these pops! It's still quite warm here so I can definitely still use frozen treats - these sound delicious!

    Callie is so cute and being a dog owner is one of the best things in life to me -- I have no idea what life is like without one! These pops are so pretty Gayle, and your photos are just beautiful! The strawberry mocha flavor is something I know I would love and I these will still be perfect for the warm Indian summer ahead here in CA!
