Strawberry Peanut Butter Granola
This Strawberry Peanut Butter Granola is packed with crunchy granola clusters, pecans, peanut butter chips, and strawberries. It’s an easy treat that makes the perfect breakfast or snack to satisfy your peanut butter cravings!
Granola is one of my favorite things to make.
I love the smell, the texture and how easy it is to throw together. It’s also fun to customize granola based on your tastes, or even just what you can find in your kitchen. Love dried cherries? Throw those in! Have some chocolate chips? They belong in there. Like almond butter? Mix it in! See what I mean?
And I’m no stranger to homemade granola. From my banana bread version to this pumpkin granola and that apple kind, I love it all. I think it’s safe to say that experimenting with different flavors of granola is what my dreams are made of.
Since I’m a gigantic peanut butter fan (and who isn’t? Unless you have a peanut allergy), I decided to take my love for this butter and add it to some granola. I’m only sorry that I didn’t think of this before.
I mean, peanut butter and I have a love affair. I practically eat a spoonful of it every day, straight from the jar (no shame here) and love finding new ways to incorporate it into baked goods. See here, here and here.
But, then I got this brilliant idea to add some strawberries into the mix! While I couldn’t think of how to add fresh strawberries into the actual peanut buttery mixture (I’ll have to keep working on that), I did add some freeze-dried strawberries to give it that burst of fruity flavor. And that’s how this Strawberry Peanut Butter Granola was born.
This Strawberry Peanut Butter Granola is packed with crunchy granola clusters, pecans, peanut butter chips, and strawberries. It’s an easy treat that makes the perfect breakfast or snack to satisfy your peanut butter cravings!
Like most of my recipes, this granola was so easy to make! Simply combine the dry ingredients, followed by the wet, and then mix together. To achieve those big, clustery pieces, I only stirred once while this was baking.
And the hardest part about making this Strawberry Peanut Butter Granola? Letting it cool after it was done baking! I found, through my granola fails over the years, that it’s best to let the granola cool completely on the pan so that it turns nice and crisp. But, if you have no willpower like I do, then feel free to sneak a bite (or three) while it’s cooling. I won’t tell!
Like I mentioned before, this granola is so easy to customize, depending on your tastes. Feel free to leave out the pecans, add in walnuts, or use chocolate chips instead. But whatever combination you use, I guarantee you’ll be practically addicted to this snack.
The peanut butter flavor and hints of fruit from the strawberries make such a delicious combination! The crunchy clusters and smooth peanut butter chips are a winning combo, and I think you’ll agree. Snack on this by the handful, add some milk to devour as a cereal, sprinkle over some Greek yogurt, or even add as a topping to ice cream. Whatever your fancy is, I think this Strawberry Peanut Butter Granola become your new favorite!
