Add almonds to your high-powered blender (I used my Vitamix) or food processor.
Blend or process for about 5-6 minutes, scraping down the sides of bowl when necessary.
If using a food processor, your processing time will probably be longer, anywhere from 10-20 minutes. Continue to process until almonds are broken down into 'butter.'
Add honey and coconut oil, if desired. If you like your almond butter on the thicker, chunky side, you can omit the coconut oil.
If you like it thinner, add the coconut oil and adjust to your desired consistency. Blend/process and then taste. Add more honey and/or coconut oil if needed.
