Roasted Lemon Parmesan Asparagus
is a simple and easy side dish that’s packed with flavor.
• Fresh asparagus
• Olive oil
• Salt and pepper
• Lemon juice
• Parmesan cheese
Preheat oven to 425°F.
Line a large baking pan with parchment paper or lightly coat with non-stick cooking spray.
Place asparagus in baking pan then drizzle with olive oil and season with salt and pepper.
Toss to coat the asparagus then arrange in an even layer. Drizzle lemon juice over asparagus, followed by 1/4 cup Parmesan cheese.
Bake for 8-10 minutes, or until asparagus is crisp on the outside and tender on the inside.
