This One Pot Lasagna Soup tastes just like the classic dish, but without all of the prep work. Easy to make and full of simple ingredients!

Ingredients

  • 1 pound ground beef
  • ½ medium white onion , diced
  • 2 teaspoons minced garlic
  • 4 cups low-sodium beef broth
  • 1 (14.5 ounce) can diced tomatoes , drained
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon dried basil
  • Salt and pepper , to taste
  • 2 cups dry rotelle or rotini noodles
  • ¼ cup shredded Parmesan cheese (plus more for garnish, if desired)

Instructions

  • In a medium pot, cook and crumble ground beef, onion, and minced garlic until no longer pink. Drain, if needed.
  • Add beef broth, diced tomatoes, Italian seasoning, basil, salt and pepper to pot. Stir and bring to a boil.
  • Once broth is boiling, add pasta and stir to combine. Reduce heat to medium and cook for 10 minutes or until pasta is tender.
  • Remove from heat and stir in cheese. Serve immediately with additional cheese, if desired.
