Preheat oven to 350F. Line a large baking pan with parchment paper or grease well with non-stick cooking spray. Set aside.
In a small bowl, whisk white sugar and cinnamon. Set aside.
Cut each slice of bread into 3 strips. Set aside.
In a medium bowl, whisk milk, eggs, brown sugar, vanilla bean paste, cinnamon, and nutmeg.
Dunk each slice of bread into egg mixture, letting excess drip off. Place onto prepared pan and sprinkle each stick with half of cinnamon sugar topping.
Bake for 10 minutes, remove from oven, flip sticks to opposite side and sprinkle with the rest of cinnamon sugar topping. Return to oven and bake for 10-12 more minutes, or until french toast sticks are cooked through and golden brown.
Remove from oven and let cool for 5 minutes before serving.
