Creamy Sausage and Mushroom Rigatoni

Ingredients

1 (16 ounce) package rigatoni noodles
1 pound bulk mild Italian sausage
2 tablespoons unsalted butter
16 ounces sliced fresh baby bella mushrooms
2 teaspoons minced garlic
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups heavy whipping cream
Fresh parsley for garnish if desired

Instructions

Cook pasta according to package directions. Drain and set aside.
In a large skillet, cook and crumble sausage until no longer pink. Drain and set aside.
In the same skillet, melt butter over medium heat. Add mushrooms, minced garlic, Italian seasoning, salt, and pepper. Cook for 5-6 minutes, or until mushrooms are tender and most of the liquid is evaporated.
Add heavy cream to the same skillet and stir to combine. Bring mixture to a boil, then lower heat to a simmer and cook for 8-10 minutes, or until slightly thickened. Add sausage to skillet and heat through.
Serve pasta with sauce and garnish with fresh parsley, if desired.
