Ingredients

  • 2 cups fresh or frozen raspberries
  • 2 tablespoons honey or granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons chia seeds

Instructions

  • Add raspberries to a medium saucepan. Cook over medium heat until raspberries break down and becomes liquidy, about 8-10 minutes.
  • Remove pan from heat. Press raspberries with the back of a spoon or potato masher.
  • Stir in honey and lemon juice. Add more to sweeten, if desired. Add chia seeds and stir. Let stand until thickened, about 5-10 minutes. If you want a thicker texture, add more chia seeds, 1 teaspoon at a time, until it reaches your desired consistency.
  • Transfer to a mason jar with lid or air tight container and let cool completely. Jam may be stores for up to two weeks in the refrigerator or up to 3 months in the freezer.
