Preheat oven to 350°F. Line a large baking pan with parchment paper. Set aside.
Gently unroll each pie crust onto a lightly floured surface. Using a heart-shaped cookie cutter, cut out an even number of hearts from each pie crust.
Place half of hearts onto prepared baking pan. Spread about 1 tablespoon of jam onto each heart that is on the baking pan. Take the remaining hearts and place over the heart with the jam. Using a fork, press down the edges of pie crust to lightly seal.
In a small bowl, whisk the egg and water. Brush over the tops of each heart. Sprinkle sparkling sugar over each heart.
Bake for 18-20 minutes, or until hearts are golden. Remove from oven and let cool for 10 minutes on pan. Then remove to a wire rack to cool completely.
When pies are cooled, prepare the glaze. In a small bowl, whisk the powdered sugar, milk and vanilla extract. Take each mini pie and dunk into the glaze. Top with sprinkles, if desired.
