Ingredients

  • 3 cups old-fashioned oats
  • ¾ cup chopped pecans
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup creamy peanut butter
  • ¼ cup melted coconut oil
  • 4 tablespoon honey
  • ½ teaspoon vanilla bean paste or vanilla extract
  • 1 cup peanut butter chips
  • 1 cup freeze-dried strawberries

Instructions

  • Preheat oven to 350°F. Line a large baking pan with parchment paper or a silpat baking mat. Set aside.
  • In a large bowl, combine the oats, pecans, cinnamon, and salt. Set aside.
  • In a medium bowl, combine the peanut butter, coconut oil, honey, and vanilla. Stir until well blended. Add the wet mixture to the oats and mix until thoroughly combined.
  • Spread oat mixture onto baking pan in an even layer. Bake for 20-25 minutes, stirring halfway through, until granola is browned. Remove from oven and let cool completely on baking pan.
  • Add peanut butter chips and dried strawberries to granola and stir to combine. Store in an airtight container at room temperature.
