Ingredients

  • 1 tablespoon butter
  • 1 green pepper diced
  • ½ red pepper diced
  • 3 cups Roasted Maple Cinnamon Sweet Potatoes
  • 5 slices bacon cooked, drained, and crumbled
  • 4 eggs
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Melt butter over medium heat in two small skillets or one large skillet.
  • Add green and red pepper to skillet and saute until tender, about 5-6 minutes. Remove from heat.
  • Add sweet poatoes and bacon to peppers. Stir to combine.
  • Make 2 wells in each skillet (or 4 wells in one large skillet) for the egg. Crack each egg into the well.
  • Bake for 8-10 minutes, or until eggs are set. Remove from oven. Season with salt and pepper, if desired.
