Coconut Oil Chocolate Hazelnut Squares

Ingredients

  • cups old-fashioned oats
  • 1 cup milk chocolate chips
  • 1 teaspoon chia seeds
  • ½ cup hazelnuts chopped
  • cup peanut butter
  • ½ cup honey
  • ½ cup coconut oil in solid form

Instructions

  • In a large bowl, combine oats, chocolate chips, chia seeds, and ¼ cup hazelnuts. Set aside.
  • In a medium bowl, combine peanut butter, honey, and coconut oil. Microwave until melted, stirring every 20 seconds so that oil does not burn.
  • Remove from microwave and pour peanut butter mixture into oat mixture. Stir thoroughly until combined. Chocolate chips will melt and create chocolate mixture.
  • Pour mixture into an 8x8 baking pan and press down using a spatula. Top with additional chocolate chips and rest of hazelnuts.
  • Refrigerate until firm, about 30-40 minutes. Cut into squares.

Notes

Squares are best kept in the refrigerator, as the bars will become too soft if left at room temperature because of coconut oil.
