Ingredients

  • 3 cups old-fashioned oats
  • 1 cup chopped walnuts
  • ¾ cup pumpkin seeds
  • 3 teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup packed light brown sugar
  • ½ cup pure pumpkin
  • ½ cup melted coconut oil
  • cup maple syrup
  • 1 cup dried cranberries

Instructions

  • Preheat oven to 350F. Line a large baking pan with a silpat mat or parchment paper. Set aside.
  • In a large bowl, combine the oats, walnuts, pumpkin seeds, pumpkin pie spice, cinnamon, and salt. Set aside.
  • In a medium bowl, whisk together the brown sugar, pumpkin, coconut oil, and syrup until thoroughly combined.
  • Pour the pumpkin mixture over the oats and stir well, ensuring that the oat mixture is entirely covered.
  • Spread granola evenly onto prepared baking sheet and place into oven.
  • Bake for 25-30 minutes until golden brown, stirring every 10 minutes to avoid burring. However, if you like granola clusters, do not stir while cooking. This will ensure that you get those large, crunch clusters.
  • Remove from oven and let cool completely on baking pan. Toss with dried cranberries and keep covered in an airtight container.

Notes

Granola will keep in an airtight container for up to one month.
