This Grilled Garlic Herb Pork Bowl is an easy meal that's loaded with flavor. Marinated pork loin filet is prepared on the grill and then tossed with some white rice and sautéed spinach. Simple to make a perfect for busy weeknights, this hearty dinner is sure to be a favorite all year long!
1Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet
2tablespoonsolive oil
2teaspoonsminced garlic
1poundfresh baby spinach leaves
½teaspoonsalt
¼teaspoonpepper
4cupscooked white ricedivided
Lemon wedges for toppingif desired
Instructions
Heat a charcoal or gas grill to about 375F-400F.
Place Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet onto grill and grill for 30-40 minutes per pound, turning occasionally, until meat reaches an internal temperature of 145F.
Once Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is done, remove from grill and let rest for 5-10 minutes. Cut into thin slices.
While Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is cooking, prepare spinach. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
Add spinach, salt and pepper. Toss and sauté for about 3-4 minutes, or just until it begins to wilt. Remove from heat.
To assemble bowls, fill each bowl with white rice, and then top with sautéed spinach and 3 slices of Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet.
