Ingredients

  • 1 Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 pound fresh baby spinach leaves
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 cups cooked white rice divided
  • Lemon wedges for topping if desired

Instructions

  • Heat a charcoal or gas grill to about 375F-400F.
  • Place Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet onto grill and grill for 30-40 minutes per pound, turning occasionally, until meat reaches an internal temperature of 145F.
  • Once Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is done, remove from grill and let rest for 5-10 minutes. Cut into thin slices.
  • While Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet is cooking, prepare spinach. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
  • Add spinach, salt and pepper. Toss and sauté for about 3-4 minutes, or just until it begins to wilt. Remove from heat.
  • To assemble bowls, fill each bowl with white rice, and then top with sautéed spinach and 3 slices of Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet.
  • Garnish with a lemon wedge, if desired.
