Ingredients

  • 2 cups old-fashioned oats
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • tablespoons vanilla bean paste or vanilla extract
  • 1 cup chocolate chunk morsels or chocolate chips

Instructions

  • Preheat oven to 350°F. Lightly spray two baking pans with non-stick cooking spray or line with parchment paper or a silpat baking mat. Set aside.
  • In a medium bowl, whisk together oats, flour, baking soda, and salt. Set aside.
  • In a large bowl, cream butter, brown sugar, and white sugar with an electric hand mixer or stand mixer with fitted paddle attachment. Add in eggs, one at a time, followed by vanilla, and beat until combined.
  • Pour wet ingredients into dry ingredients and stir until just combined. Be careful not to over mix. Gently fold in chocolate chunks.
  • Shape dough into rounded balls and drop onto baking pans. Bake for 12-14 minutes or until tops are lightly browned and edges are set.
  • Remove from oven and let cool for 10 minutes, then move to a wire rack to cool completely.
