Ingredients

  • 1 pound whole white mushrooms washed and patted dry
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons fresh rosemary chopped
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Lightly grease a large baking pan with non-stick cooking spray or line with parchment paper. Set aside.
  • In a large bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Add the mushrooms and toss, ensuring each mushroom is coated.
  • Spread mushrooms in an even layer on prepared baking pan. Bake for 18-20 minutes, or until mushrooms turn golden and start to caramelize.
  • Remove from oven and garnish with grated Parmesan cheese and fresh rosemary, if desired. Serve immediately.
