These Vanilla Sugar Cookie Bars are soft, chewy, and loaded with the classic flavor of sugar cookies, but require no chilling or rolling out the dough. The addition of BAILEYS® Coffee Creamer Frosted Vanilla Cookie in the bars and frosting gives the treats a deliciously sweet taste that comes together in minutes!

Preheat oven to 375F. Line a 9x13 baking pan with parchment paper or spray well with cooking spray. Set aside.
In a large bowl, beat butter and sugar with a hand mixer or stand mixer with fitted paddle attachment until creamy.
Add in egg, BAILEYS™ Coffee Creamer Frosted Vanilla Cookie (or milk/creamer), and vanilla, Mix until combined. Add in flour, one cup at a time, followed by baking powder and salt. Mix until just combined. Press dough in an even layer into prepared pan.
Bake for 16-18 minutes, or until edges begin to turn slightly golden. Remove from oven and let cool completely in pan.
When bars are cool, prepare frosting. In a large bowl, beat butter until creamy. Add in BAILEYS™ Coffee Creamer Frosted Vanilla Cookie, vanilla extract, and powdered sugar until fluffy. Pour in a few drops of food coloring, if desired.
Spread frosting onto cooled bars. Lift parchment paper out of pan and cut into bars.
