Easy Brown Sugar Cookies are soft, chewy, and simple to make. Made with just a few ingredients, these cookies are filled with a buttery, caramel flavor and are so delicious!

Ingredients

  • cups all-purpose flour
  • 1 tablespoon cornstarch
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • cups packed light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • ½ cup granulated sugar, for rolling dough (if desired)

Instructions

  • In a medium bowl, combine flour, cornstarch, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream butter and brown sugar with a hand mixer or stand mixer with a fitted paddle attachment until light and fluffy, about 2-3 minutes. Add eggs and vanilla and mix.
  • Gradually add flour mixture to butter mixture, beating until just combined. Cover and refrigerate dough for at least two hours, or overnight.
  • When ready to bake, preheat oven to 350°F. Line two large baking pans with parchment paper or lightly grease with cooking spray.
  • In a small bowl, add remaining ½ cup granulated sugar. Scoop dough by the tablespoonful and then roll in sugar.
  • Place onto prepared pans and bake for 10-12 minutes, or until edges are lightly browned. Let cool on pan for 10 minutes, then remove from pan and let cool completely on wire racks.

Notes

  • Brown sugar cookies will keep in an airtight container at room temperature for up to three days.
