Ingredients

  • 2 cups all-purpose flour
  • cup packed light brown sugar
  • 1 tablespoon baking powder
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed (see note below)
  • 1 medium apple, peeled and chopped (honey crisp or granny smith work well)
  • ½ cup heavy cream (plus more for topping)
  • 1 large egg
  • 2 teaspoons vanilla bean paste (or vanilla extract)

Topping:

  • 2 tablespoons granulated sugar
  • teaspoons ground cinnamon

Instructions

  • Preheat oven to 400°F. Line a large baking pan with parchment paper. Set aside.
  • In a large bowl, whisk flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Cut in butter with using a pastry cutter or two forks until mixture resembles coarse sand. Then fold in chopped apple.
**Alternatively (and a much easier method), freeze one stick of butter for about 30 minutes. Remove from freezer and grate butter using the largest holes on a cheese grater. Add to flour mixture and stir to combine. Set aside.**
  • In a small bowl, whisk heavy cream, egg, and vanilla. Gradually add to flour mixture until dough comes together.
  • Turn dough out onto prepared pan or a lightly floured surface. Knead several times and shape into an 8-inch disk. Dough will be sticky crumbly. Cut dough into 8 wedges, but do not separate pieces.
  • In a small bowl, stir granulated and cinnamon together. Brush scones with additional heavy cream and sprinkle with cinnamon sugar mixture.
  • Bake for 20-25 minutes, or until scones are golden brown. Remove from oven and let cool on pan completely before cutting into wedges.

Notes

  • Scones will keep in an airtight container at room temperature for up to four days.
