Preheat air fryer to 400°F. Brush each side of chicken lightly with olive oil. Set aside.
In a large bowl, add potatoes and drizzle with olive oil, tossing to combine. Set aside.
In a small bowl, add garlic powder, Italian seasoning, dried thyme, onion powder, salt and pepper. Sprinkle evenly over both sides of chicken and the remaining seasonings over potatoes and stir well to combine.
Place chicken thighs in an even layer in air fryer basket. **If there is not enough room for the potatoes, you may need to cook in batches. If you do have room in the air fryer, add potatoes in the other half of basket.**
Cook for 10 minutes, then remove basket, flip chicken and potatoes, and cook for another 3-5 minutes, or until chicken is cooked through to an internal temperature of 165°F and potatoes are fork tender.
