Ingredients

Chicken Thighs:

  • 1 pound boneless skinless chicken thighs (about 4-5 chicken thighs)
  • 1 tablespoon olive oil

Seasonings:

  • 3 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Potatoes:

  • 1 pound baby potatoes (halved or quartered)
  • 1 tablespoon olive oil

Instructions

  • Preheat air fryer to 400°F. Brush each side of chicken lightly with olive oil. Set aside.
  • In a large bowl, add potatoes and drizzle with olive oil, tossing to combine. Set aside.
  • In a small bowl, add garlic powder, Italian seasoning, dried thyme, onion powder, salt and pepper. Sprinkle evenly over both sides of chicken and the remaining seasonings over potatoes and stir well to combine.
  • Place chicken thighs in an even layer in air fryer basket. **If there is not enough room for the potatoes, you may need to cook in batches. If you do have room in the air fryer, add potatoes in the other half of basket.**
  • Cook for 10 minutes, then remove basket, flip chicken and potatoes, and cook for another 3-5 minutes, or until chicken is cooked through to an internal temperature of 165°F and potatoes are fork tender.

Notes

  • Recipe was tested using my 5.8 quart Air Fryer.
  • Depending on the size of your air fryer, you may need to cook the chicken and potatoes in batches, as both will need to be in an even, single layer.
  • Chicken and potatoes will keep in an airtight container in the refrigerator for up to four days.
