Herb Roasted Potatoes
These Herb Roasted Potatoes are seasoned with Parmesan cheese, a variety of spices, and baked to perfection. Crispy on the outside and tender on the inside, this easy side dish comes together in minutes and is sure to be the hit of the dinner table!
Servings: 4 servings
- 2 pounds baby potatoes halved
- 2 tablespoons olive oil
- ⅓ cup grated Parmesan cheese
- 3 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- Dash of paprika
- Salt and pepper to taste
- 2 teaspoons chopped fresh parsley for garnish, if desired
Preheat oven to 425F. Line a large baking pan with parchment paper or coat with non-stick cooking spray. Set aside.
In a large bowl, add olive oil, Parmesan cheese, garlic, Italian seasoning, oregano, thyme, paprika, salt, and pepper. Mix well. Add potatoes to olive oil mixture and toss to coat.
Spread potatoes evenly onto prepared baking sheet. Bake for 20-25 minutes, or until potatoes are golden and crispy on the outside.
Sprinkle with parsley and Parmesan cheese, if desired.
