This Smashed Chickpea and Avocado Sandwich is loaded with flavor and makes a light and healthy lunch or dinner. Chickpeas and avocados make the perfect pair when blended with a touch of spice and lime juice!
1(15 ounce) can chickpeas drained, rinsed, and patted dry
2avocados
Juice of 1 lime
1tablespoonchopped cilantro
½teaspoongarlic powder
Salt and pepperto taste
Tomato slices for garnishif desired
4slicesthick bread
Instructions
In a medium bowl, mash chickpeas with fork or potato masher.
Slice avocados in half, remove pits, and scoop out middle into the bowl with the chickpeas. Add lime juice, garlic powder, salt, and pepper. Mix together until combined.
Spread mixture onto two slices of bread. Top with tomato slices, if desired, and another slice of bread. Serve immediately.
Notes
I chose not to cook the chickpeas before mashing, although this can be done if desired.You may want to remove skins of chickpeas before you mash, as they will flake off in bowl.
